Tater Tot Sausage Breakfast Casserole
Ingredients
1 pound Jimmy Dean pork sausage
8 eggs
1 1/2 cups heavy (whipping) cream
1 1/2 tsp salt
1 tsp black pepper
1/4 tsp garlic powder
1 package frozen tater tots, approximately 24 oz. (See Note)
2 cups Cheddar cheese
Instructions
Preheat the oven to 375 F. Spray 9x13 pan with non-stick cooking spray. Brown the sausage over medium heat in a skillet, breaking sausage into small pieces. Drain any excess grease, and set cooked meat aside. Whisk together the eggs, heavy cream, salt, pepper, and garlic powder together. Put the frozen tater tots in the bottom of the dish until a full layer is formed. On top of the tater tots, add the precooked sausage, then the Cheddar cheese, and finally pour on whisked egg mixture. Cover the casserole dish with foil. (This helps the edges not cook too quickly and burn.) Bake the casserole for 40 minutes to start, remove foil from the dish, and then bake for another 15-20 minutes until the eggs are fully cooked, if necessary. (Some ovens cook faster, so check at the 40-45 minute mark for cooked eggs.) Serve hot with sour cream, tomatoes, salsa, and/or crunchy bacon.
Bacon Cheese and Tater Tot Casserole
Ingredients
1-2 lbs bacon, diced
2 cups shredded cheese
2 cups milk
8 eggs
1 bag of tater tots
1 packet of ranch seasoning mix
Instructions
Preheat the oven to 350 F. Fry bacon until crisp; drain. Mix tater tots, cheese, and bacon together. Put in a 9x13 pan. Mix together milk, eggs, and ranch mix. Pour over the tater tot mixture. Bake for 1 hour.
Bacon Cheeseburger Tater Tot Casserole
Ingredients
2 pounds ground chuck
1 onion, diced
1-15 ounce can tomato sauce
1-8 ounce package cream cheese, softened
3 cups shredded cheddar cheese, divided
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1-12 ounce package bacon, cooked, drained, and crumbled
1-32 ounce package frozen tater tots
1 cup grape tomatoes, quartered
1/2 cup sliced dill pickles, halved
Instructions
Preheat the oven to 400 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray. In a large skillet, brown the ground beef with the onion, salt, and pepper over medium high heat until the meat is crumbled. Drain well. Return the meat to the skillet. Add the cream cheese, 1 cup cheddar cheese, tomato sauce, and Worcestershire sauce, and stir until melted. Transfer the ground beef mixture to the casserole dish. Top with the remaining cheese, the crumbled bacon, and a layer of tater tots. Bake for 35 to 40 minutes or until the tater tots are browned and the edges bubble. Top with tomatoes and pickles.
Taco Tater Tot Casserole
Ingredients
1 lb. ground beef
1 pkg Taco seasoning
1 can whole corn, drained
1 can black beans, drained & rinsed
Optional: 1 can diced tomatoes
4 oz wt. shredded Cheddar cheese

Instructions
Preheat the oven to 400 F. Grease a 9x13 pan. Brown the beef in a skillet. At the same time, boil water for macaroni & make as directed on the box, but add shredded cheese and a splash of milk. Drain grease from the beef, and put beef back in the pan. Mix water & taco seasoning as directed on pkg., and stir into beef. Add corn, beans and, if using, diced tomatoes. Cook for 10 minutes on low to medium heat to get everything warm. Once everything is hot enough, put in the bottom of the pan, put shredded cheese on top, then put a layer of tater tots on top, and bake until tater tots are done.
Big Mac Tater Tot Casserole
Ingredients
2 lbs lean ground beef
1 cup Thousand Island dressing
1/4 cup mayo
1 cup diced yellow onion
1 cup diced dill pickle
1 tbsp onion powder
1 tbsp garlic powder
1 tsp salt
1 tsp pepper
2 cups shredded Triple Cheddar Cheese Blend
24 oz frozen tater tots
Topping
1 cup shredded iceberg lettuce
1/4 cup Thousand Island dressing
Instructions
Preheat the oven to 400 F. Grease a 9x13 baking pan. Dump ground beef into a large skillet over medium-high heat along with a dab of margarine or butter. Crumble the ground beef well as it cooks. Once the ground beef is fully cooked, remove the pan from the heat and drain the excess grease. Add the Thousand Island dressing, mayo, diced onion, diced dill pickle, onion powder, garlic powder, salt, and pepper to the pan with the beef. Stir until all of the ingredients are fully combined. Dump the ground beef mixture into the baking dish, and spread it out evenly. Sprinkle the shredded cheese on top of the beef. Place the tater tots in a single layer on top of the cheese. Place the baking dish in the oven, and bake the casserole until the tater tots are golden brown, 40-45 minutes. Remove the casserole from the oven, and sprinkle the shredded lettuce on top. Drizzle the Thousand Island dressing over the lettuce.
Chicken Bacon Tater Tot Casserole
Ingredients
1 rotisserie chicken, chopped
10-15 bacon strips, chopped and cooked until crisp and drained
1-10.5 oz can of cream of chicken soup
1/2 pack of ranch powder
1 cup sour cream
2 cups of shredded cheese, divided
1 package of tater tots
Instructions
Combine chicken, bacon, soup, ranch dressing, sour cream, and 1 cup cheese. Place in a baking dish, line tater tots on top, and sprinkle with 1 cup cheese. Bake @ 350 for 45 minutes uncovered. Broil last 5 minutes for color.
HAM, GREEN BEAN, AND TATER TOT HOTDISH
Preheat the oven to 375 F. Combine 1 lb. diced ham, 2 cans French Green Beans (drained), 1 or 2 cans mushrooms (drained), 2 cans Cheddar Cheese soup, and 1 can milk. Put in a casserole dish or 9x13 pan. Cover with frozen Tater Tots. Cover baking dish and bake for 1/2 hour; reduce oven to 350 F. and bake 15 minutes; then take cover off and continue baking for another 15 minutes.
