A friends mom used to make what she called “Christmas potatoes” but she refuses to give me the recipe and I can’t find it anywhere. It’s not funeral potatoes, I know it included cheese & pimentos I believe. Anyone have something similar? Thanks!
@lindseyh idk what those are lol. It was baked in a casserole dish with I think cheddar & pimentos that’s all I can remember. But I’m obsessed with them lol.
@brencov we do a recipe called cottage potatoes. 5 or 6 almost cooked potatoes cubed. Added to a big bowl with diced onion and a jar of pimento drained and a green pepper diced. A full block of velveta cheese cubed and 5 slices of white bread cubed. Mix together add salt and pepper. Pour into a very deep casserole. I use a deep enamel roaster. Pour 1 stick of melted butter over. And add milk till almost touches top of potatoes. Cover with foil. Into refrigerator overnight. Bake 350 at least 90 minutes till hot and bubbling all the way through
@brencov maybe this: 1 pkg frozen potatoes O'Brian (hash browns), 1 stick of butter melted, 1 onion, chopped. 1 can cream of mushroom soup,, 1 cup sour cream, 2 cups mild cheddar cheese. Mix all ingredients well, place in buttered 9x13pan, bake at 350 for about1 hour and 15 minutes, or until bubbly and lightly browned. The potatoes O'Brian have red and green peppers and onions in them, but the regular cubed hash browns work just fine too. Have heard them called funeral potatoes, hash brown casserole, cheesy potatoes, etc. They are like the ones they have at Cracker Barrel, or better!
@chris8459 , I am going to make this for a side on Christmas! I make a very few tweaks (don’t we all!), but it is basically the same. My husband loves this, and I was going to keep it a surprise, but he caught me when I tried to take the potatoes home!
