We make lots of oven roasted veggies at a time - at least two frozen bags of broccoli or 🥦 medley at a time. Then we make enough breaded chicken breast for three meals. Day one we have the chicken and veggies, then later in the week we make chicken Parm over pasta or on rolls as sandwiches with store bought sauce and a salad of greens with some of the cold leftover roasted veggies on top. A third day we use the rest of the chicken hot or cold on top of a big salad, or make chicken sandwiches or cut up the chicken , toss with wing sauce or BBQ sauce or a mixture of both, then put the chicken on top of a frozen cheese pizza, topping with more cheese halfway thru baking.
