Homemade Bacon, Egg, and Cheese Biscuits: Delicious and Budget-Friendly Breakfast Option!

We are a fan of bacon egg and cheese biscuits but after spending over $30 on drive thru for breakfast one day over the weekend I decided to give the homemade version a shot since they seemed fairly easy. They turned out great! I whipped up 8 eggs, sprayed a glass 9x13 dumped in the egg and cooked as a sheet in the microwave until they were done. Topped the egg with 7 slices of cheese and then cut into 8 squares. Air fried the bacon. This made 8 sandwiches for under $8. We each ate 1 with my teenage son eating 2. Wrapped the remaining 3 in paper towel and put in container in fridge for later. Will be doing this way more often!
Eggs - Free from friend with chickens ($1.90 at store for a dozen)
Bacon- $2.99 lb
Sliced cheese - $2.50 for 12 slices
Biscuits- $1.79 for 8

Good idea but you do not cook bacon in the airfryer. It will destroy your air fryer. All the grease splatters into the convection fan. Thats number 1 do not cook besides wet battered foods.
 
@gwsany I cook my bacon in microwave or in the oven at 400 degrees. I have 2 microwave bacon racks in case one of mine wears out (over years going through dishwasher the plastic does wear out) Picked them up at thrift stores for $1 each.
 
@sparky63 I make breakfast burritos 10 or 12 at a time. We are retired but it is so much easier. I wrap & freeze & hubby just sticks in the microwave. If I don't want burritos I just cook about 24 oz of bacon in the oven for sandwiches etc... put some in fridg & some in freezer.
 
@shacky you might want to try this recipe! It has changed my bulk breakfast burrito making life 🤣 there are 10 in my family so I made three different versions for the freezer … we can bake this up and easily divide it into 16 even portions and add cheese to the burrito, roll, wrap and freeze.
 
My husband and kids love these! 2 dozen or so at a time and freeze them saves a ton of time & money! The eggs I do salt, pepper, garlic & fresh chives before cooking. I use English muffins and toast them before putting together and freezing… and do a variety of sausage , bacon & ham! (Just egg and cheese for myself) 😋
 
@tikiman53 saran wrap each one & then place as many as I can fit in gallon size freezer bags. When you’re ready to heat them up I unwrap them & place them on a paper towel in the micro for a 45 seconds or so.
 
@tikiman53 you’re welcome! So easy & my kids can make their own while I get myself ready. It’s so convenient!
I also pre-make them pancakes & wrap them the same way (2 pancakes per pack). Same storing and heating directions.
 
We toast English muffins, (buttered), fry eggs, heat Canadian bacon , and top with cheese. We have these often. Make these a few times a week but I’ve never tried freezing them
