Sear all sides of meat in a cast iron first and add extra bay leaf. Searing in a non cast iron will work too, just not as great a depth of flavor. I've got a tried and true recipe or two if you want!
Bay leaves, garlic, red wine or 12 oz beer. We love with fresh or canned tomatoes. If you saute seasoned meat w/o flor it won't thicken up as much as if you do. Also, you can brown meat & throw it all in the crock pot. My hubbs loves stew too!
