My kids love the rice and beans served at Mexican restaurants so I wanted to try and recreate that for them. I can’t get over the funky flavor of canned refried beans and store bought flavored rice just isn’t the same! These recipes were so cheap to make and could serve an army. I also used the beans with ground beef to make burritos and they were a hit!
Rice-
2 cups long grain rice
1/8 cup vegetable oil
8 oz tomato sauce
1 tsp salt
1 tsp minced garlic
4 cups water
1 cube chicken bouillon
Dash of cumin, pepper, and garlic powder
Heat oil in large pan over medium heat and brown the rice. Add the chicken bouillon cube to the water and microwave for 3 minutes and stir to dissolve. When rice is brown add all of the ingredients to the pan. Stir, cover, and let simmer for 30 minutes or until the rice is cooked and the liquid is gone.
Refried Beans-
3 cups pinto beans rinsed
9 cups water
2 tbsp minced onions
2 tsp black pepper
2 tbsp minced garlic
1 tsp salt for cooking, can add more to taste when it’s done
4 tsp cumin
Combine all in a crockpot and cook for 8 hrs on high, stirring occasionally. When beans are soft use an immersion blender to purée. I used a hand mixer and that worked pretty well too.
