Homemade Rice and Beans Recipe: Perfect for Mexican-Inspired Meals

I used soft taco sized flour tortillas. I cooked some ground beef with taco seasoning and rolled the beef with some of the beans in the tortillas. Topped with cheese dip and shredded cheese. Bake at 350 for 20 minutes and then turned on the broiler for a few minutes until bubbly.

Yes 👏 I freeze the extra rice and beans … they hold up well .. I also use a “bean masher” aka potato masher (my non Hispanic friend told me that’s what it was when I told her I couldn’t find a bean masher in stores )
 
I use canned refried beans but add sour cream, taco seasoning, cumin, jalapeño juice. It is so good. Also the uncle Ben’s Spanish rice I add stuff to that to make it more flavorful.
 
try actually frying the beans with oil… they are refried beans after all! I used canned beans and frying them is a game changer
