In large bowl add 1 cup cup cornmeal, 1 tsp salt, 1 cup buttermilk, 2 eggs, 1 cup cream style corn set aside. Brown 1 lb ground beef (salt n pepper to taste) add 1 medium onion, diced. 3 pickled jalapeños, diced. Mix meat and cornbread mixture. Add 2 cups cheddar cheese. Pour into well greased skillet or casserole dish. Bake at 350 for 45 minutes or until done. We like pinto beans on the side to complete meal.
