I do a version of this but I use spanish rice and add a 10.5oz can of diced tomatoes with green chiles (Rotel).

This is perfect!! Not expensive, not fancy(cuz kids don't like fancy) and sounds delicious! If there is any little bit left over freeze it to make into a soup.
Add rinsed black beans, corn and beef broth. Sounds good
