Simple Pasta Recipes for Giant Noodle Collection

Pasta salads are versatile
Greek with feta, Kalamata olives, olive oil, red peppers, spinach, Greek seasoning, red wine vinegar
Mexican with taco meat, salsa, onions, cilantro cheese,and avocado
Italian with cut up pepperoni, pepperoncini, peppers, onions, Parmesan, spinach, Italian seasoning, and Italian dressing.

For egg noodles I do a brown butter sage sauce or add to soups
For spaghetti noodles I do Asian dishes (we add butter and soy sauce to the noodles then top with stir fry) or an Asian inspired soup. Lemon pepper noodles are also a good thing to try.
Any of the noodles that you listed taste great with a good gravy over the top of them with veggies mixed in ( think beef, chicken, or pork gravy with a matching meat simmered in it).
 
Garlic Butter broccoli, mushrooms parm
4 OZ uncooked pasta (2 C small shaped pasta)
1 Can cannellini beans
3 tbsp butter (divided)
2 tbsp olive oil
1/2 medium onion (chopped)
7 OZ cremini mushrooms (sliced)
3 cloves garlic (minced)
1/2 cup chicken broth or veg broth or white wine
1/2 cup freshly grated parmesan cheese
1 tsp fresh thyme leaves, chopped
2 tbsp fresh parsley, chopped
Salt & pepper (to taste)
Cook pasta first until slightly before al dente ( about 5 min)
Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once the pan is hot, add the onions and mushrooms. Sauté, stirring occasionally, until the water has been released from the mushrooms & cooked off and everything gets a good sear and is browned/caramelized (this gives a ton of flavor). It'll take 8-10 minutes or possibly a bit longer.
Once mushrooms are well browned, add broccoli florets. Stir in the rest of the butter, plus the garlic, thyme and 1 tbsp parsley. Cook for about a minute. Cook until golden and crispy on the edges, about 8-10 minutes. Veggies must be well browned.
Pour in the vegetable stock and beans and cook for 2 minutes, to reduce the sauce slightly.
Take the pan off the heat and stir in the parmesan cheese, thyme and remaining parsley. Add a splash of the hot pasta water prior to draining the pasta (a couple tablespoons) and then toss the pasta with the sauce. Season with salt & pepper as needed and serve immediately.
 
Chicken BLT Ranch pasta Salad
1 can of chicken, drained
1/2 bag of Bacon Bits
1/2 bag of Salad Mix or 1/2 head chopped lettuce
2 diced Tomatoes or quartered cherry Tomatoes
1 bottle Ranch dressing
12 oz box cooked Rotini or Elbow Noodles
... Mix together and chilled, served cold
 
Pasta w vodka sauce
Scampi (chicken or shrimp)
Macaroni salad
An antipasta salad (I love making antipasta w the tri colored spiral pasta; no idea what the correct name is for those tho lol!)
Plain garlic butter pasta
You can make a taco themed pasta (meat, beans, tomatoes, peppers, onions, corn etc)
Broccoli cheddar (ik it’s along the lines of Mac n cheese but it’s creamier and has a bit more flavor to it)
Macaroni and peas (throw some ham or bacon for added flavor)
You can make a deconstructed stuffed shell (just throw everything into a pan; pasta, ricotta, spices and sauce)
There’s so much, pasta is a go to in our house especially when it’s on sale lol
 
Pastizo….
Browned hamburger with finely diced onions and garlic, salt and pepper.
Boiled aldente shellroni. Once aldente and drained, into a large ovenproof pasta bowl add the meat and 4 fresh tomatoes diced and one can rotel. Mix. Add 2jars of Mexican queso
Sauce or 2 cans cambell cheddar soup. Mix. Two cups shredded cheddar on top and bake 350 for 20.
If you want you can add on top before the cheese a jar of artichoke hearts drained, or Greek
Olives sliced. This is an Americanized version of a Greek dish.
 
Pasta salad use rotisserie chicken or chop some ham add black olives ,purple onion, bell pepper , chopped tomato toss with balsamic vinegarette, can also had cheese
