Starting a Yearly Challenge: Unique Recipe Ideas Needed (No Spaghetti or Tacos!)

Crockpot/slow cooker meal
2 lbs of pork tenderloin
1 can each of Campbell’s French onion soup, golden mushroom soup, and cream of mushroom soup
If you like mushrooms I add an extra can of mushrooms.
1. Mix all three soups together.
2. Put pork tenderloin in crock pot.
3. Add soup mix on top
4. Cook on low for 4-5 hours or until meat is tender
We also like to eat with either mashed potatoes or white rice.
Such an easy meal to prep and just let cook and it’s soo yummy!
 
Deli sliced roast beef (rare)
Mashed potatoes
Brown gravy mix
Corn, beans, peas, veg of your choice
Bread for toast.
Make the gravy, heat your veg and mashed potatoes. Toast your bread. While toasting, add sliced deli roast to the gravy, just to heat through. Top toast with mashed potatoes, roast beef & gravy, top with veggies, or put on the side. Knife and fork meal.
 
We live an hour or more away from restaurants so we make things at home like copycat chic fil a, we use our instant pot to make French dip beef and eat on toasted French bread with cheese, Italian beef sandwiches, pot roast with veggies, mesquite chicken, mashed potatoes, it is a time saver and very versatile, I use it for rice and boiled eggs too
 
Taco pizza, tator tot casserole, French onion chicken, crockpot chicken and dumplings, French dip sandwiches, sweet and sour chicken with rice.
 
Porcupine meatballs .. mix together
1 - 1 1/2 lbs ground beef with 1 egg seasonings of salt pepper garlic powder 1/4 cup uncooked rice .. add just enough seasoned bread crumbs to hold mixture together .. make meatballs and place in casserole dish .. dilute 1 can condensed tomato soup with 1/2 can water and pour over meatballs .. cover with foil and bake at 375 degrees for 45 minutes to 1 hour .. stir halfway through .. rice will poke out of meatballs when done .. thicken sauce with some cornstarch dissolved in water .. great on mashed potatoes or noodles
