Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

Stuffed peppers? Or i make a version of stuffed pepper soup that’s good. I brown the beef, toss some of the fat, add 2 cans of tomato sauce, 1-1/2 can of water, (in another pot cook your rice then when it’s ready, add it to the beef and sauce), then add your peppers (i like to dice them and sometimes an onion if i feel like it) i also add salt, pepper, garlic, onion, paprika and some oregano. I dont know exactly how much, i kinda just shake til the ancestors tell me I’m good 😂
 
I know you said not chicken n rice but I make chicken n rice w salsa, onions , garlic, chicken broth, and colby or cheddar cheese. my boys absolutely love it.
 
I made rice with frozen mixed vegetables and with frozen broccoli and thinly sliced ham with pepper and a little seasoning salt and it was so good with soy sauce and cheese
 
Butternut squash Alfredo! (I normally use penne noodles)
Basically you cut up a butternut squash and roast it in the oven, and then blend it to make it smooth. Then you put some butter and garlic in a pan and salute it before you pour your butternut squash purée in there. Then you salute that for like 4-5 minutes with garlic salt, crushed red pepper, onion powder and whatever else you want. I season the hell out of it because the butternut squash is sweet when you first purée it. Then you pour some heavy whipping cream and stir until thickened, add some parmesan cheese and pasta water. I add spinach at this step but that’s totally optional. You could also add chicken or whatever protein you want.
Pour it over cooked noodles and sprinkle mozzarella and parm over it and put it on broil until the top is bubbly.
It’s literally amazing and it’s a great way to use fall veggies. I don’t have any measurements (I’m sorry) because I always just kinda pour with my heart but I do know that I normally use like two small or one larger butternut squash. There are some more specific recipes on Pinterest that may be more helpful with measurements. Just search (butternut squash Alfredo sauce).

We made this tonight and put it over rice. It was delicious! My child who hates onions (I added 2) said it was "marvelous" The only other thing I added was some salt and pepper and 3 cloves of garlic. I did use 3 lbs of meat, 2 packs of brown gravy, and 2 sticks of butter.
 
We call this goulash.
Fry 1 lb. ground beef, discard grease, sauté a lg chopped onion and a whole green chopped bell pepper together, mix with ground beef add a big can of crushed tomatoes, let cook for a few min then add lots of rice!!! Season to taste, salt, pepper, onion powder, garlic powder.
