We use a food processor to blend the following and then mix in a huge bowl with a large pot of cooked rice: 6 bell.peppers, 10 carrots, 2 bunches green onions, 2-3 packs baby portabella mushrooms, 1 large container baby spinach, 4 eggs, 2 cups plain Greek yogurt, Worcestershire sauce (to taste) and then add spices: salt, pepper, cayenne, curry (we use lots of curry). Then mix it all up and form patties... We fill sheet pans (stacking them 4-high, with parchment paper squares between them) and freeze. You can then vacuum seal them up and use them throughout the year - we saute them from frozen in a pan with avocado oil and serve them up as a side dish, or put them on top of a burger... These Veggie patties are amazing!! I like to dip mine in BBQ sauce. My daughter likes them with sour cream.
