Here’s my weekly menu for the week ahead incase anyone needed any ideas 😊

Layered Enchiladas
Corn tortillas
Ground beef
Shredded cheese (I use the Mexican blend from walmart)
Enchiladas sauce of choice (I use the canned Rosarita)
Black olives (Optional)
Just cook the beef seasoned with garlic, onion, salt, pepper and some of the sauce and warm up the sauce and tortillas. As you’re layering dip the tortillas in the sauce then add meat, cheese and olives until pan is full, dump extra sauce on top, top with cheese and bake at 375 for about 20-30mins or until cheese on top is melted.
 
@michaelnfamily try the hatch brand enchilada sauce, I find it at Target or our local groceries, it comes in red or green & is delicious. Also, since you shop Costco, have you ever tried the shredded Mexican white cheese? Huge bag so you have to plan to use it up in like 10-14 days.
Quesadillas, tacos, nachos...
I learned from that Suzy lady cooking show, lol, she would tweak everything to be quicker. She would actually cook a bunch of ground meat in advance but not overly season it, just basics, S&P, garlic, then you could use it during week for spaghetti, tacos, etc. Same with chicken. I made chicken Verde nachos last week, so good. Just shred and add the hatch green enchilada sauce plus your fave spices. Chopped sautéed onions, tomatoes cooked down with the sauce. Then all your reg. Nacho ingredients. I always fry my own tortilla chips. Yummier, plus get to use healthier oils.
 
Parm Corn
Either fresh or canned corn (either will work whatever you have on hand)
Grated or parm
Butter
Garlic powder
Onion power
Pepper
Salt
Ground red chili powder (optional)
In a skillet melt the butter and add corn with seasoning cook until corn starts to get a little bit of a brown color and then add parm, removed from heat and stir
