How Do I Get Breading to Stick on Homemade Fried Chicken?

Dip in flour then egg then in your final crust of choice. If you want it extra crispy dip in egg again then back in the final crust and press gently covering all the chicken. Make sure your oil is up to the temperature you have it set for. If deep frying in a basket dip the basket in the oil for about 30 seconds first then gently lay your chicken in. If pan frying make sure to have enough oil to about cover the chicken and wait till the chicken is browned before flipping it. I like using tongs and pinching it up from the sides.
 
I actually have a recipe I came up with I called Salsa SunChip Chicken. I took boneless skinless chicken tenders and dipped them in flour then in southwest chipotle dressing and then in crushed up Salsa SunChip’s. I placed them on a butter sprayed nonstick cookie sheet. Sprayed the top of the chicken with butter and baked them on 350 for about 30 minutes or until chicken is cooked through. Sometimes if the top of the chicken wasn’t crispy enough I would turn the oven on broil just long enough to brown it watching it constantly.
 
Soak chicken in buttermilk for about 1/2 hr take chicken out n add an egg to milk . In another bowl have flour and seasoning dip chicken in milk/ egg wash then dip in flour n coat chicken, dip back in milk/ egg n then flour again. Make sure oil is hot. I usually brown then chicken, then set a baking pan with a wire rack on it n bake the chicken . You can make gravy with the drippings from frying the chicken
 
I have never tried boneless/skinless , as it’s the skin on the thighs that gets crispy. Maybe a regular breast if you don’t like thighs?
 
Let it sit for a few minutes before you drop it in the oil. By the time you have dredged everything, you should be able to start dropping the bigger pieces. I soak, pat them dry, dredge in seasoned flour, then egg mixture, Then seasoned flour. Set aside until oil is to temp. Dark pieces first. Let them get a good crust before you try to turn them. Be patient.
 
I use eggs instead of water… mix about 6 eggs then put your chicken in it then batter it and repeat again and it should stick.
 
I can also cut up a whole chicken so people can see that it's much cheaper to buy a whole chicken nowadays than it is to purchase the pieces so I can cut up a chicken ... I can cut it up really fast but I will slow it down so people could see it takes me about 3 minutes to cut up a whole chicken
