How Do I Get Breading to Stick on Homemade Fried Chicken?

Dry your chicken off with paper towel first then roll in flower before dipping in egg. Also try not to mess with the chicken for at least 10 minutes after putting it in the hot pan
 
Start heating your oil on medium heat. Don't bread just wash and dry 🍗 clean.season. put flour in bowl or bag and coat each piece thoroughl
Make sure grease it HOT! Flick a little water in it and it will pop. DO NOT put your chicken in skillet til hot.i don't turn my chicken but once or twice. Guaranteed!
 
Dip in flour, dip in egg, then back in flour or seasoned breading. Wait for the oil to get hot before adding chicken
 
I use a little butter and olive oil in pan till sizzling. I use eggs to coat chicken and roll in panko crumbs. Then fry on medium high. Never have a problem. Super crispy. 5-7 mins each side.
 
Are you using a cast iron pan with shortening or vegetable oil? Is the grease deep enough to cover the chicken at least halfway? I’d it hit enough?
I do the 3 step breading
1-flor and it’s better if the chicken is damp to have the flor attach
2. Egg and milk bath
3. Bread crumbs.
We get enough breaded to
Fill 2 pans at once and keep goi g from there.
When we take it out, I never stack them. I have 2 full roasting pa s lined with paper bags or paper towels and set the chicken on an edge on its side so only a little touches. Thus way it stays crisp and not mushy Kati g on top of each other .
I keep the roaster in the over on super low heat below 200.
The trick to me is having the grease hot but not smoking .
And certain oils have a high cooking temperature which is why restaurants used to use peanut oil one of the highest but now have switched to soy oil because of allergies.

Something I learned from America's Test Kitchen is, once it's breaded, let it sit for 5 minutes before frying. It helps solidify everything.
 
Eggs& milk with salt , pepper, Italian seasoning , flour with same spices. Make sure your grease ( I only use Crisco)is very hot. Dip in egg mixture, then flour mix, then put in grease. Fry at high temp on both sides then turn down, let cook for a total of an hour. I do mine in electric frying pan.
 
Chicken in zip lock bag. Add a little olive oil to coat. Zip it closed and massage till all chicken is coated. Dump bread crumb (seasoning) coating in bag. Shake till completely coated. Place on air fryer grate. Cook 400° 10-15 min per side.
 
I was just reading about this cause I have the same issue. It says to let your meat set in the fridge prebreaded before putting into the pan. Also that the oil could not be hot enough
 
@robkatch78 before any cooking. Do your breading and put onto a plate covered in the fridge for maybe half an hour and then pull out and cook. It's supposed to help cook and set the breading onto the meat. I'm gonna test that theory
