Stuffed pepper soup..green peppers, hamburger/pork/sausage whatever you have. Rice, broth, seasonings. I like to throw in onion, different color peppers. It’s super easy and hard to mess up!!
Caldo de res (beef soup) beef shanks (they usually come 2 in a pack. I usually buy about 4.) Add veggies (cabbage, potatoes, carrots, zucchini, onion, corn on the cob. Sometimes I add celery. You can add any that you like. I add a can of tomato sauce and season with garlic powder, cumin and salt. We eat it with a pot of Mexican rice. Add a scoop or two into your bowl. It takes a bit to prepare and make but it's worth it.

Chicken Tortilla Soup
2-4 Chicken Breast
Chicken Broth
2 cans of corn (drained)
1-2 cans diced tomatoes
2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp ground cumin
1 tsp minced garlic (optional)
Olive oil
I boil the chicken breast with the chicken broth, then cube them up.
(Don't discard the water/broth you will need it)
In a skillet I drizzle some olive oil then put the corn, diced tomatoes and the seasonings and mix together until it starts to bubble, then I add it to the water/broth and add the cubed chicken in. Then cover on medium heat until it boils , then reduce heat and simmer for 15 minutes.
