Best Ever Banana Bread
1 stick real unsalted butter (softened but not melted)
3/4 cup white sugar
1/2 cup dark brown sugar; packed
3 over-ripe medium bananas; mashed
2 eggs, beaten (room temp)
1 tsp vanilla extract
2/3 cup buttermilk
2 cups all-purpose flour (sifted)
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup chopped walnuts or pecans (optional)
Preheat oven to 350. Beat softened butter until smooth, add sugars and cream (whip) for 2 minutes. Add mashed bananas and buttermilk; mix on low speed. Add vanilla to eggs and beat, then add to mixture.
In a separate bowl, sift flour and mix in all dry ingredients. Add dry ingredients to wet, just until combined. Do not over mix.
Optional: fold in nuts or chocolate chips. Sprinkle extra nuts, cinnamon and brown sugar on top, before baking.
Bake in greased loaf pan for 45-50 minutes. Check with toothpick and bake additional time if needed.
For muffins, fill cups 3/4 way full and bake 14-16 minutes.
This recipe makes 2 loaves, or 1 loaf and about 16 muffins.
