I have a greek rice pudding recipe that i have made for 40 yrs...its amazing. cook 1 cup rice in 4 cups of milk with 3/4 cup of sugar, stove top on lower temp for 45 minutes or so, till rice is soft, add 1c 1/2 n 1/2, to 1 cup raisans add 1c boiled water and set for 5 minutes to soften raisans. Add to pudding, then temper one beaten egg with hot rice mixture, add 1/2 heavy cream. stir till temp of rice is 165 which cooks the egg. Remove from heat add 2 tsp vanilla...omg do we love this, I may have to make that today. lol authentic mexican rice. 2c rice, in a tbsp oil in large covered fry type pan, toast the rice well, add a diced onion after it is toasted, add 2 chix boullion to 4 cups water, A tbsp of tomato paste, and 1 tsp of cumin add all this to rice and bring to boil 3-5 minutes....cover cook on low for 25 minutes, take off heat and then let sit 10 more minutes undisturbed, fluff with fork enjoy. google breakfast rice in the slow cooker. thats a good and easy on as well.
