Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

I like to add diced tomatoes, diced peppers and diced apples to rice. Use it as a meatless dish or as a side to the meat of your choosing.
 
Unstuffed peppers. Brown hamburger, add chopped onions, garlic powder, large chunks of green and red peppers. Cook until softened. Then add 1 can tomato sauce, one can diced tomatoes and simmer 10 minutes. Add one to 2 cups cooked rice and stir through until mixed well. Top with grated cheese and cover until cheese melts.
 
Thai coconut rice!!!
1/2 teaspoon coconut oil (or vegetable oil)
2 cups Thai jasmine white rice, rinsed well
13.5 ounces canned coconut milk
1/2 teaspoon salt
1 3/4 cups water
Rub oil on bottom of pot. Add other ingredients and bring to a soft boil, then reduce to a simmer, cover and let simmer until rice is done and liquid is absorbed. Top with cilantro.
Southwest black bean, sweet potato and rice bake.
1 tablespoon olive oil
2 cups peeled and diced sweet potato
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
4 ounces diced green chiles
1/2 cup salsa or salsa verde
2 cups cooked brown rice
15 ounce can low sodium black beans, rinsed and drained
2 tablespoons chopped cilantro
Juice of a lime
1/2 cup shredded cheddar, Colby Jack, or Monterey Jack cheese
Heat the olive oil in a large skillet. Add in the diced sweet potatoes, salt and pepper, and sauté over medium heat for about about 8 minutes. Add 3-4 tablespoons of water to the skillet and cover it with a lid. Let the sweet potatoes steam until they're fork tender, about another 4 minutes depending on the size.
Add the green chiles, black beans, rice, spices, salsa, cilantro, lime juice, salt and pepper to the skillet. Stir everything together until combined.
Add the shredded cheese to the top and cover the skillet with the lid. Let everything cook for another 3-4 minutes until the cheese is melted and everything is warm. Serve topped with additional cilantro, avocado, and plain Greek yogurt or sour cream if desired.
Spinach Parmesan noodles. Boil noodles and add spinach in the last couple minutes of boiling. Drain, add half a stick of butter, a couple splashes of heavy cream and 1/4 cup Parmesan (fresh is best, grated also works)
 
Not sure what kind of rice you have. Here's some white rice suggestions I have collected.
White rice
Pork chops and rice. I bake the chops in beef broth, cream of mushroom soup, and a pack of onion soup mix (can also add sliced onions but I don’t) until I can shred them. Then I add rice and bake for another 30 mins. Super filling and makes a lot depending on how many chops/how much liquid and rice

sticky rice
Place rice over a pot of rapidly simmering water (don't allow water to touch sieve) and steam, covered, for 15 minutes. Remove lid and flip rice over. Continue steaming, covered, for 10 minutes, until rice is translucent and glossy. Taste to make sure rice is completely cooked; it may take up to 10 minutes more.

I personally cook rice 2 ways. The first way I steam it with a little bit of water, then put it on low in the back burner the second way I boil it I let it boil really hard for a good five minutes while I’m stirring a cover it and stick it in the back and just put a towel on it and let it sit 15-20 minutes no heat under it, that seems to be a sticky rice for me. That’s what I used to make my sushi roll ups.

Crushed tomatoes. Fry 4 large onions in butter. Mix together add any kind of hot peppers. Add to 2 cups of fryed rice. Cook for 2 or 3. Hours on low heat. For best re s ults call Belgrades in Akron. Ohio. You will love it. Serve with chicken

Cooked unseasoned Rice in a bowl with milk on top of it with sliced bananas cinnamon and sugar and with or without raisins. It's a Mexican recipe called aroz con leches it translates to rice with milk.

i use a cup of chicken broth. bring to a boil add in your rice let it cook then add in a scrambled egg and sautéed onion. add soy sauce to taste. keep cooking a little longer and it’ll brown it up some. it takes like 10-15 minutes

Make congee. Throw rice in a pot with double the water (ie. 1 cup rice 2 cup water). Boil the shit out of the rice til its super soft. So about 30 mins on medium heat. Add ginger, garlic, chicken bouillon, soy sauce or fish sauce, and shredded chicken. Garnish with cilantro and green onion. If you wanna go a bit extra, add bean sprout and chilli (sambul). For protein it can be anything really. Beef, pork, chicken or fish. Can even do boiled eggs then cut open and drizzle some soy sauce on it.

Diced fine cut veges and salmon bits. Wee bit of Oyster and soy sauce. Also, a good side dish for scrumptious buttered chicken.

Fry the rice in butter add some adobe, garlic and onion powder, paprika, salt and pepper ..move it to the side and scramble some eggs and cook it on that side then mix it all together.

Add sausage, onions, bell peppers, mushrooms saute in lil butter add your rice

Sounds weird but so good….mix it with cooked hamburger, add can of corn, can of cream of mushroom soup and small can of chicken n rice soup. Warm up and we top with soy sauce

I crack an egg into some left over rice, season ut, add bread crumbs and then drop spoon fulls into a hot pan with a little oil to make little rice cakes. I top with teriyaki glaze,
Sesame oil and chopped scallions. Cheap, simple and delicious

My mom used to put it in a bowl with a cracked egg salt pepper garlic powder salt pepper parsley italain bread crumbs Progreso pat it like a hamburger and fry them in veg oil they are soo good

Throw chicken and mushrooms in it, add a little soy sauce, crushed pepper and a dash of garlic salt. And some butter of course 😋
 
My Rice and Beans
I only feed myself so these are my measurements, you may need to adjust. I get 3-4 meals out of this.
Knorr rice sides (I like Mexican but any will do)
vegetables fresh or frozen (I'm not a fan of canned but they may work)
Can of black beans (drained and rinsed)
can of Rotel (drained save it for later)
Seasoning if needed
Prepare rice as instructed.
If I'm using fresh vegetables I saute them first in oil and garlic. If they are frozen I zap in the microwave for a couple of minutes, then I add to the cooked rice while still on heat. Stir Add Rotel and beans. Stir, season if needed. Stir fully. Cover and let cook for a few minutes. I like to top with shredded cheese, salsa, guacamole and chips.
 
I made a chicken casserole. it was really good and easy. Rice cooked, canned chicken , black beans, garbanzo beans, corn, diced tomatoes, taco seasoning and shredded taco cheese on top baked
 
Garlic Butter broccoli, mushrooms parm
4 OZ uncooked pasta (2 C small shaped pasta)
1 Can cannellini beans
3 tbsp butter (divided)
2 tbsp olive oil
1/2 medium onion (chopped)
7 OZ cremini mushrooms (sliced)
3 cloves garlic (minced)
1/2 cup chicken broth or veg broth or white wine
1/2 cup freshly grated parmesan cheese
1 tsp fresh thyme leaves, chopped
2 tbsp fresh parsley, chopped
Salt & pepper (to taste)
Cook pasta first until slightly before al dente ( about 5 min)
Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once the pan is hot, add the onions and mushrooms. Sauté, stirring occasionally, until the water has been released from the mushrooms & cooked off and everything gets a good sear and is browned/caramelized (this gives a ton of flavor). It'll take 8-10 minutes or possibly a bit longer.
Once mushrooms are well browned, add broccoli florets. Stir in the rest of the butter, plus the garlic, thyme and 1 tbsp parsley. Cook for about a minute. Cook until golden and crispy on the edges, about 8-10 minutes. Veggies must be well browned.
Pour in the vegetable stock and beans and cook for 2 minutes, to reduce the sauce slightly.
Take the pan off the heat and stir in the parmesan cheese, thyme and remaining parsley. Add a splash of the hot pasta water prior to draining the pasta (a couple tablespoons) and then toss the pasta with the sauce. Season with salt & pepper as needed and serve immediately.
 
Bow-tie or fusilli pasta boiled separately.
Ground meat of your choice (optional)
Saute 1 cup onions, mushrooms, chopped garlic.
Mix cooked ingredients above together in skillet. Add chicken, turkey or beef base to taste. Add cheeses. I prefer parm, mozz, with some cheddar. Melt cheese. Add enough fresh spinach to cover the top. Stir in or cover pan to steam. Mix together after wilted. Top woth chopped tomato. Season with dippong herbs, Seasoned Salt, or dry Good Seasons Otalian Dressing Mix.
 
Tonight I had leftover white rice and Surimi. I sauteed onions and garlic in oil. Added sliced up Banquet sausage and Surimi and the rice. let it cook. Then scrambled in some eggs.
Leftover scramble. I sauteed onions, garlic and shredded carrots (had some leftover) in oil. Added surimi and leftover rice. let it cook. Then scrambled in some eggs.
