Cook some shrimp or chicken (shred), make some plain white rice and set to the side. Cut some onion, bell pepper, jalapeno (really whatever peppers you want. Put some oil in the bottom of the pot, add onion and peppers, cook a few minutes , then add minced garlic, tomato paste and Cajun seasoning, let cook a few minutes, then add the white rice, mix, then meat and mix. It's so good!! You can also add cherry tomatoes, zucchini, sausage, the possibilities are endless.
