Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

4 tablespoons butter
2-3 cloves garlic, minced
1 cup uncooked white rice
1/4 of an onion chopped (optional)
1 cup chicken broth/stock
1 1/3 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper (or to taste)
1/3 cup fresh grated parmesan cheese
Additional milk or cream, if desired.
I usually double this and put it in the insta pot because we love it so much!! You can use more or less of the milk and broth (but keep the same liquid amount), depending on how much chicken brothy(soupy) flavor you like versus the milky cream taste.
 
Million dollar Salad : 4 cups cooked rice, cold and rinsed, well drained. Tub cool whip, 8oz block cream cheese 1/2 cup sugar, cream all together, add fruit: suggest fruit cocktail, add marshino cherries for color, add rice and 1/2 bag of marshmallows colored are nice 👍. Very big amount, good for large family or pot luck
 
Mexican Rice
Ingredients
2 tablespoons vegetable or canola oil
1 cup uncooked long-grain white rice
1 ½ cups chicken stock or broth
8 oz. can tomato sauce
1 teaspoon chili powder
1 teaspoon garlic salt
½ teaspoon ground cumin
Instructions
Rinse the rice in a mesh strainer until water draining is clear. (This is optional, but it helps remove the starch and keep the cooked rice from being mushy.)
Heat the oil in a 4-quart saucepan over medium-high heat. Add the rice and cook until translucent (somewhat clear) about 3-4 minutes; stirring frequently.
Add the rest of the ingredients and bring to a rapid boil over high heat.
Stir once and cover. Turn the heat down to a low simmer (a little less than medium low) and cook for 20 minutes. Remove cover and let stand 2-3 minutes before fluffing with a fork.
 
Cowboy pasta salad
Ingredients
1 pound dried wagon wheel pasta
1 pound hickory smoked bacon , diced
3/4 pound lean ground beef
1 teaspoon cumin
pinch red pepper flakes
salt and pepper
1 cup mayonnaise
1/4 cup barbecue sauce
2 tablespoons Spicy Brown Mustard
2 tablespoons Worcestershire sauce
2 & 1/2 teaspoons hot chili sauce
15 ounce can whole kernel sweet corn, drained
2 cups cherry tomatoes, halved
1 & 1/2 cups shredded sharp cheddar cheese
5 scallions, diced
Instructions
Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water. Drizzle with a little olive oil to prevent sticking.
In the meantime, saute bacon in a large nonstick skillet over medium heat until crispy. With a slotted spoon, transfer to a paper towel lined plate to drain off grease.
Wipe out skillet, leaving a little of the bacon grease. Add the ground beef; cook, breaking it up into tiny crumbles, until cooked through and no longer pink. Season with the cumin, red pepper flakes, and with a pinch of salt and pepper. Drain off fat. Set aside to cool completely.
In an extra large bowl, whisk together the mayonnaise, barbecue sauce, mustard, Worcestershire sauce, and hot chili sauce until combined and smooth. Add in the cooked pasta, bacon, beef, corn, tomatoes, cheese, and scallions; toss to combine and coat.
 
Broccoli Pasta
Ingredients
4 Tablespoons butter
4 cloves garlic, minced
2 cups chicken broth
1 1/4 cups half and half
½ lb. medium pasta shells
¼ teaspoon EACH: onion powder, dried thyme, pepper
½ teaspoon EACH: dried oregano, dried parsley
3 ½ cups broccoli florets, uncooked
2 teaspoons lemon juice
¾ cup Parmesan Cheese, finely grated into a powder
Instructions
Measure out all ingredients prior to beginning. (This is called “mise en place” and is a good idea for quick recipes.) Pro Tip: Cut the broccoli into smaller pieces so that they cook more quickly.
Melt butter over medium heat in a large skillet. Add the garlic and cook for 1 minute.
Add the chicken broth, half and half, and seasonings.
Bring to a boil and add the pasta. Submerge the pasta into the liquid and let it return to a boil. Cook partially covered according to package instructions. Add the broccoli during the last 6 minutes. Run a silicone spatula along the bottom of the pan occasionally to prevent the pasta from sticking to it.
Remove cover taste-test a pasta noodle for doneness before proceeding. If needed, cover and cook longer, until your desired doneness is obtained.
Remove from heat. Add the lemon juice and use a silicone spatula to gently mix in the Parmesan cheese.
Sauce will continue to thicken upon standing. Garnish with parsley and serve with garlic bread with cheese.
 
Cook & crumble ground beef or Turkey. In a casserole dish layer dried rice, mix in beef broth, sprinkle French onion mix or use French onion soup, add meat crumbles and bake on 400 for about 20 minutes.
I’ve also done this without rice and topped it over mash potatoes. It’s my carb comfort meal 😃
 
Beef stew served over rice. It’s delicious!
I don’t even make homemade. Just buy the cans of Dinty Moore beef stew.
Just steam the rice as normal. Heat up the beef stew. Ladle the beef stew over the rice. Easy peasy!
 
garlic rice in rice cooker,
chunk of butter 🧈 50g+
6/8 cloves chopped fine garlic
combine on cook in bottom of cooker
add rice 2-3 cup (whatever you like)
add water & mix
add 2-3 tsps chicken stock (to taste)
add 1 tsps imitation saffron
stir & cook
so good
 
I just made this tonight I call it poor man beef stroganoff. I have a big family so do what you need for yours.
Ground beef
Cream of mushroom soup 2-4 cans or 2 large ones
Mushrooms fresh or cans we had 4 sm cans
2 pks brown gravy mix
Milk
Egg noodles 2 bags
Cook mushrooms til water is out set aside. Brown hamburger season as you like, Drain. Cook your noodles while your hamburger is cooking, drain the pasta. Add brown gravy mix to hamburger add in mushrooms; add that to the drained pasta and in the cream of mushroom soup and enough milk to be able to mix it well and serve
