Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

I am getting ready to make mushroom, zucchini and tomatos on the stove and pour it over rice. It is summer and garden fresh veggies are everywhere.
 
This isn’t a whole meal but a great side is cilantro/lime rice. Fresh Cilantro is cheap. I buy several limes to keep on hand. This is my go to for a side.
 
@ivette chicken tikka masala!!!! Trader Joe’s, sprouts and frys stores has a great sauce you can use. I usually sautéed mushrooms, bell pepper, chicken and call it a day ❤️
 
Haystack. Start with a bowl of rice, then pass dishes everyone builds their own. Curry sauce, bits of chicken, bits of beef, pineapple crushed or chunks, different veggies cooked to crisp tender. Nuts Etc.
Could do the same with a Mexican theme, salsa, beans, jicama, etc.
 
Here's mine. We did this in an instapot but I'm sure you could do it stovetop too.
1 package of Chicken Sausage
1 can of diced tomatoes
1 can of corn
2 cans of beans (we used black)
1 cup ish of diced bell pepper
1 cup ish of diced onion
1 1/2 cups of rice
Southwest seasonings
Sauté onion, bell pepper, and sausage together. Add beans, corn, tomato, seasonings, and rice to the pot. Add water sufficient to cook (2 ish cups). Pressure cook for 10ish minutes.
Top with your choice of cheese, sour cream, etc.
 
Brown pork ground meat, add chopped up eggplant to it smother it good along with onions,bell peppers lil garlic, and you have yourself and eggplant dressing, yummy do not add to much eggplant
 
Ingredients
2 lbs boneless, skinless chicken breasts
2 0.87oz packets dry chicken gravy mix or brown gravy mix or a package of each
1 10 oz. can cream of chicken soup
1 3/4 cups water or chicken stock
1/3 tsp black pepper
Instructions
Empty the gravy packets, cream of chicken soup, water and pepper in a slow cooker. Whisk until the gravy is smooth. Add chicken breast.
Cook on low for 5-6 hours. Serve on rice or mashed potatoes.
 
▢ 3 boneless skinless chicken breast
▢ 1 can of tomato sauce 15 oz can
▢ 1 bunch of cilantro torn apart
▢ 1 lime juiced
▢ 1 tbsp chili powder
▢ 1 tbsp cumin
▢ Garlic salt or powder
▢ Salt and pepper to taste
Place the chicken in the crockpot
Dump in the seasonings (including cilantro) and squeeze the juice from the lime.
Pour 1 can of tomato sauce on top.
Cook on low for 6 to 8 hours or high for 3 to 4 hours. (If you have to cook it longer than 8 hours due to work, then add ½ can of water)
Shred chicken, stir and serve.
Serve over rice and top with some fresh cilantro.
 
Ingredients
4 boneless skinless chicken breasts
14 ounce can Cream of Chicken Soup
14 ounce can Cheddar Soup
14 ounces Chicken Broth
1/2 teaspoon Cajun Seasoning
1/4 teaspoon garlic salt
1 cup sour cream
6 cups steamed broccoli florets Boiled in hot water for 3 minutes then drained
1 cup shredded cheddar cheese
Instructions
Place soups, chicken broth, Cajun and garlic salt into a crockpot over low heat. Whisk until smooth. Add chicken, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.
When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.
Serve over steamed rice and sprinkle with cheese if desired.
 
Ingredients
4 cups chopped broccoli
1 (10 ounce) can of cream of chicken soup
1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
1/4 cup of butter melted (1/2 stick)
2 large eggs, slightly beaten
1/2 medium yellow onion finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed
Preheat oven to 350*F
Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
Add 3/4 cup of cheese to broccoli mixture and mix well.
Spray a 8x8 square casserole dish with cooking spray.
Pour entire contents into an 8x8" square baking dish.
Top with remaining 3/4 cup of cheese and Ritz crackers.
Bake for 30 minutes or until cheese is melted and top is golden.
 
*Creamy parmesan rice*
Melt butter, (add chopped onion if you like) add uncooked rice, garlic powder, salt & pepper. Add chicken broth (or stock) and milk, simmer/boil covered on medium heat about 15min until rice is tender and liquid is absorbed. Then add a bunch of grated Parmesan cheese and mix, let cheese melt. If it’s too thick, add more milk or broth. Quick and delicious! Add chicken and/or broccoli to make it a meal
