Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

Chicken fried rice:
I buy however many chicken thighs I need (they are pretty cheap in my opinion too). Marinade the chicken in 1/3 cup soy sause, 1/3 cup sweet tai chili sause and a pinch of pepper for 3 hours. Then cook them on 425 for 15 min skin side down and then flip and cook for another 15 min. In your pan add chopped onion and garlic. Scramble an egg or two depending on preference into the pan as well. Add your cooked rice, (I cook mine in the microwave but you can do it however you like). Add frozen bag mixed veggies. I usually buy the peas and carrots. I microwave for a few minutes so they are not frozen. After combining in the pan I add 3 tablespoons of soy sause, sometimes I add more if it looks to light in color. It is easy, cheap and delicious!
 
I make tortilla soup. instead of putting in tortillas, I put a scoop of cooked rice in the bottom of the bowl first then add the soup, cilantro, cheese, etc
 
the simplest most exquisite cheap but expensive meal I make literally at least once a week is plain ole white rice, spam, and egg. Just pepper for seasoning cuz spam is pretty salty on its own. Just cut into slices, fry the spam a bit on each side and throw some whisked eggs when the spam is almost “cooked” to liking. And serve all together. Personally I add some ketchup but my bf hates it so up to you.
 
Midnight garden chicken
1 can cut green beans (drained)
1 can sweet corn (drained)
1 can cream of mushroom soup

2 cups diced cooked chicken
1 cup cooked rice
1 can French fried onion rings
1 cup milk
2 cups shredded cheddar cheese
Preheat the oven to 350 degrees.
In a large bowl, combine beans, corn, soup, chicken, rice, half fried onions, milk and 1 1/2 cups shredded cheddar cheese. Spray a 2-quart baking dish with cooking spray. Pour mixture into the dish. Bake for 20 minutes. Top casserole with remaining onion rings and 1/2 cup shredded cheese. Bake an additional 10 minutes, or until golden brown and bubbly
 
I make a homemade fried rice. I pair it with whatever meat we are having. It is easy. Scramble a couple of eggs. Add cooked rice, 1/2 a bag of mixed vegetables, add your cooked meat of choice (we like chicken, shrimp or pork) and a little soy sauce (to taste). Heat until the vegetables are hot. You can also pre cook the vegetables.
 
I grew up eating Super Rice which is just rice cooked in whatever "cream of something" soup you like. My mom made it with cream of mushroom but I like to make it with cream of celery. Hope this helps!
 
Preheat oven to 425°
Spray 9x13
Cook 1-1.5 lb. ground meat-drain
(I sometimes add 1/2 lb of ground sausage for a bit more flavor)
Put meat in 9x13
Add 2.5 C long grain white rice
Pour in 2 cans French Onion Soup
Pour in 1 carton of Beef Stock
Mix well making sure rice is covered
Slice half stick of unsalted butter into pats-place on rice
Cover with foil and cook for 30 minutes
Take foil off and cook for another 30 minutes
If some rice is a bit crunchy, mix in after cooked and it will soften up
Easy to make-feeds 2 meals for 4 people-great reheated-always a pleaser
