Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

Green enchilada chicken casserole
4 cups cooked rice
1 family sized can of cream of chicken
1 24oz can of green enchilada sauce
1 shredded Rotisserie chicken (I like the lemon pepper one from Walmart)
Some chopped green chilles
Pour it all into a pan and cover in bread crumbs, Parmesan cheese and shredded cheese and bake until cheese melts
 
Fried rice, Mexican rice, arroz con leche, sushi, red beans and rice, Cajun sausage with peppers onions and rice, cilantro lime rice.
 
Bulgogi, sometimes known as Korean BBQ beef, is a dish of thinly sliced grilled steak that has been marinated in a sweet soy, sesame, and garlic sauce. If you want to spice it up, serve the beef in lettuce cups with rice and hot pepper paste (gochujang).

INGREDIENTS
¼ cup brown sugar, packed
¼ cup reduced sodium soy sauce
2 teaspoons sesame oil
½ teaspoon crushed red-pepper flakes, or more to taste
¼ teaspoon ground ginger
1 tablespoon vegetable oil
3 cloves garlic, minced
1 pound ground beef
2 green onions, thinly sliced
¼ teaspoon sesame seeds
Cooked white or brown rice
INSTRUCTIONS
In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and ginger.
Heat vegetable oil in a large cast iron skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
Serve immediately, over rice garnished with green onion and sesame seeds, if desired.
*** I skip sesame seeds BUT I add a pan fried egg ***
 
Parmesan pasta with peas and bacon!!!
8 oz large sea shell noodles
6-7 slices of bacon, crumbled
1 cup frozen peas
About 1/4th of a large onion
Eyeball your Parmesan cheese
Start by cooking the bacon and getting the noodles going. While those are cooking, finely dice your onion. Once the bacon is done remove it but keep the grease in the pan. Add the onion to the bacon grease and cook for 2-3 minutes or until nicely sautéed. Now add your frozen peas to the onion and about 1/2 cup of pasta water. Crumble the bacon and add it back to the mixture. Strain the noodles and add it to the mixture. Eyeball as much Parmesan cheese as you desire into the mix and use salt, pepper and crushed red pepper flakes to season! It’s easy and super cheap (especially if you can find a good deal on bacon), and it’s so good I’m literally eating it right now lol
