@stealthbeast I cook mine in the instant pot, cup for up, rice and liquid. I prefer a broth to water for more flavor but you can surely use water. So 1 cup rice 1 cup water. Set on rice setting and let it go. I also have done in the microwave. But way more troublesome. Stovetop is good too. It's a 2 to 1 rational I believe. But since discovering the instant pot method, I just do that. Way easier. I also do my boiled eggs in there too. Do a whole pot 1 cup water and do 4 minutes, natural release 3, then kick that release all the way. Ice bath, I fill large bowl with mostly ice, and just a little water and dump all eggs into it. Perfect every time.
I don’t know the cut of pork chop you have or if bone in or boneless. I only cook boneless and usually no thicker than 1 inch but I make them with
Aleias Gluten Free extra crispy coating mix. Sold with the Shake and Bake or breadcrumbs or Gluten Free section. You spray them with olive oil and coat then bake in the oven.
Another way to make without drying out is vinegar peppers and pork chops. Lots of recipes online for these. We also like pork Marsala or piccata

@dieseldoor hahaha I do hear the bone in are good. I don’t like eating bone in anything. It’s just me. I also often buy a pork loin roast and cut my own boneless chops from it as I get the thickness I want. I’m sure whatever you make will be outstanding because you made it with love!!

I do it with only mush soup- but I’m sure this is good- I also usually do it in a pan- covered w foil until the last ten mins- take the foil off- I always make noodles to go with it bc that sauce is SO delicious!!
I always overcook pork chops!!
I made pork chops in my instapot Friday night that were so easy and delish. For one, they were not rubbery. M husband seemed really surprised when he tasted how good they were.

The first box of shake and bake that I purchased is when I realized I had been over cooking pork. My mom stayed with us the first week after my son was born. My husband almost had a break down when he seen her boiling pork chops to make them "tender" before baking. That was a fun conversation.
@dieseldoor, my mom's uncle had a pig farm and they slaughtered there own hogs, she said they always boiled the pork before baking. Of course she was born in 1934 so things were quite different then. As everyone has stated pork chops are a lot leaner now also not as big, so no boiling needed.
I’m learning Sous vide. Then seer them to give them the color like they been on the grill.  restaurants use a handheld torch to give it the grill color. With a thermometer you can do a pot on the stove. Then just have to good Ziploc bags or vacuum seal bags.  put in pot cook at 145 for recommended time Google it. 
They will fall apart if you’re not careful, pulling them out they will fall off the bone
