Applesauce Pork Chops for Two
Ingredients
1 Tablespoon butter
1/4 cup chopped onion
1 apple - peeled, cored & sliced
2 (1/2-inch thick) pork chop
3/4 cup applesauce
2 Tablespoons brown sugar
1/2 teaspoon ground mustard
1/8 teaspoon ground cinnamon
1/2 teaspoon salt
Ground black pepper to taste
Directions
Preheat the oven to 375 degrees. Melt butter in a skillet over medium heat; cook & stir onions & apple slices in the melted butter until tender, about 5 minutes. Transfer onions & apple slices to a bowl. Place pork chops in the same skillet; cook over medium heat until chops are browned on both sides, about 5 minutes per side. Mix applesauce, brown sugar, mustard & cinnamon into onion & apple mixture. Place pork chops in a baking dish; season with salt & black pepper. Spoon applesauce mixture over chops; cover dish. Bake in the preheated oven until the chops are no longer pink in the center; about 30 to 45 minutes. Serve with roasted asparagus (cooked in olive oil, sea salt, pepper) & baked sweet potatoes with brown sugar, pecans & marshmallows
Hawaiian Pork
Ingredients
Pork chops
1 can diced or chunk pineapple, drained
Red onion, sliced
Green bell pepper, diced
Sauce
A dash of Tamari soy sauce
1/2 cup dark brown sugar
A few squirts ketchup and Sriracha
Juice from half of a lime
1/3 cup BBQ sauce
Pineapple juice, let simmer
Instructions
Preheat the oven to 425 F. Put pork chops in a baking dish. Top with sliced onion, diced pepper, and pineapple. Combine sauce ingredients, and bring to a simmer. Pour on top of the veggies that are on top of the pork chops. Baked for 18 minutes.
