How to Cook a Tender Pot Roast: Tips and Recipes for a 3lb Chuck Roast Using Slow Cooker, Pressure Cooker, or Oven

The biggest factors to a tender juicy roast are to sear the outside (seals the juice into the meat) then low & slow. Crockpot or oven will work. Like very low for 6-8 hours. The roast will fall apart. Do not cover the entire roast as that will "boil" the meat, you do however want to add a broth in with the meat that way it adds moisture to the meat throughout the cooking process. what we do in crock pot set a cube of butter on top add and sprinkle 1 package of aujus and a packet of ranch dressing sprinkle all over add 2 1/2 cups water no need to stir. a hand full of carrots and a couple skinned taters packed around roast, before putting roast in crock pot layer bottom of pot with celery sticks to add flavor and also so juice gets under roast. cook on low for 8 hours or on high 4-6 hours, bur teters and carrots will cook faster so check then about 2 to 3 hours with fork to make sure they dont mush up on you they gtravy mixture is grest to pour over the meal while on your dinner plate,
 
I would use a slow cooker on low for about 3 hours then rest it. I have found that by wrapping it in parchment or baking paper then foil produces a nice tender joint. Have used this also on lamb and beef 🙂
 
Get a cast iron Dutch oven. We got one for Xmas and made pot roast the other night and it was by far the best pot roast I have ever had!
 
I sear mine in a Dutch oven on all sides and ends with my seasonings. Then I lay it flat and pour a quart of beer into the pan and cook it on medium heat for the first hour, checking the level of liquid every so often. After the 1st hour is up I drop the temp to low and cook for a couple more hours adding water as needed to keep the roast moist. At the 3hr point is when I add whatever vegetables I'm going to use and cook at medium heat till vegetables are done
 
Super easy: 4 hours in the oven 350 degrees and 1 or 2 packets plus water. For a slow cooker: 6-8 hours on low with 1 packet onion soup mix & water. Comes out really tender pull apart pot roast.
