In India, we make a dish called palak paneer (cottage cheese). Can be eaten with rice and roti (even bread)
Blanch spinach in boiling water and blend into a smooth paste.
In a pan, saute finely chopped onions and tomatoes until mushy, add the spinach paste, salt and spices (Coriander powder, red chilli/paprika powder, turmeric)
Them add chunks of cottage cheese and let this cook until done.
Tastes yum! Btw, I just made them to eat with hot rice.
