My Crockpot Queso Turned Out Clumpy and Off-Tasting – Need Better Recipes!

i tried making crockpot queso and it is a DISASTER.. its clumpy and the taste is so off.
i followed a recipe i saw -
12oz evaporated milk
1/2c - mozz, pepper jack and white american
low for 4 hours.
we’ve tried store bought ones and they are also a no go for us so please give me your best queso recipes please

I’ve never seen a recipe for queso that has this stuff in it. It’s rotel and valveeta on low you can add cream cheese as well and ground meat if wanted but that’s all it is
 
@heavenlyangel635 I make mine the same way and if I have leftover cheese I’ll add that. Adds more flavor. Never Mozzarella, it doesn’t have right consistency. I put mine in a crockpot not too hot and let it blend away. Always a success.

Even in crock pot, I cook my meat first and throw the rest in there on low
 
I tried the same recipe (minus mozz) and it turned out great! What brand did you use? I heard it might make a difference. Also my mozzarella always turns clumpy when I cook it so maybe that?
 
It’s white American land o lakes brand from the deli, pepperjack from the deli, equal amounts. Evaporated milk and greeen chiles!
 
I do
Rotel diced tomatoes and chiles can (small)
1 16oz mozzarella and another peper jack bag
I block cream cheese
1/2 cup sour cream
If its not creamy enough add another block of cream cheese or another cup sour cream
 
It gets clumpy because the fat starts to separate. That happens when it's too hot. You could use those same ingredients (1 can to 1lb of cheese) and do it in a sauce pan on low, for 15 minutes or so, stirring constantly. It takes practice, so try, try again 😊
