Quick After-Work Dinner Ideas (No Crockpot Recipes)

Spray a muffic pan with non-stick spray. Take a slice lunch meat (ham is my fave) and put it in the bottom of a muffin pan (like a cupcake liner). Place 1/4 of a piece of cheese in the bottom of the cup you just created. Beat eggs with a little milk, salt and pepper, and anything else you like to mix in eggs (I shredded a little bit of zucchini and added some pepperjack cheese, YUM!!). Pour egg mixture into cups. Bake at 350 for about 15 minutes. Super easy, 5-10 minutes of prep and I cleaned up my mess and wiped down the counters while they were baking. They make a great breakfast, but my husband just took them to work for dinner.

Frozen meatballs in bbq over rice with a side of veggies
Tuna noodle casserole
 
Store bought rotisserie chicken with a packet of gravy mix, a side of steamed veggies rolled in butter and garlic powder, and canned biscuits or crescent rolls!
 
If you like tuna we do toasted tuna fish sandwiches or chicken patties (from the frozen section) on hamburger buns. I have an old George Foreman grill I use for the patties. Cooks both sides at once 😜
 
Grilled cheese sandwiches are also a go to for us. I have to sandwich makers so I don’t even have to flip them 😊
 
My favorites are Korean beef (ground beef, garlic, ginger, 1/4 cup brown sugar, 1/4 cup soy sauce, red pepper flakes) or terriyka chicken (garlic, 1/3 cup brown sugar, 1/4 cup soy sauce) with steamed white rice! Another quick one we do often is tortellini with pink sauce(half marinara and half Alfredo) and garlic bread.
 
My “crock pot” is an 11 in 1 and also pressure cooks! I’ve tried several meats with seasoning and water, 20 mins on low… best meat ever! I’ve made pork tenderloin then shredded it for pulled pork, and a big roast with potatoes then used the meat again for beef and noodles!! 🥳🥳
 
Smokey Sloppy Joe and Provolone!
2 Lbs ground beef cooked and drained
2 cans sloppy joe sauce
( we use Del Monte it has a Smokey bbq flavor ) or you may add a little liquid smoke to your sloppy Joe sauce
2 boxes Texas Toast garlic bread with cheese
Shredded mozzarella cheese/ or sliced provolone
Pre heat oven to 375°
Brown the ground beef and drain, mix in sloppy joe sauce and simmer for 10 minutes stirring occasionally. On a cookie sheet place garlic toast and bake for 5 minutes. Remove toast from oven and spoon on meat mixture then top with shredded mozzarella or sliced provolone cheese and bake for 7 minutes. I also made two on garlic keto toast.

Cereal is QUICK! Do a "cereal bar" if you want to make it fun. Add fruits / granola / nuts/ raisins to it if you'd like. 🤔 this might be the quickest dinner I can think of.
