We are currently a family of 8 but our go to cheap and easy meals
Spaghetti
Grilled cheese w/tomato soup
Pasta salad and hot dogs
Spanish rice w/ground beef
Tacos
Frozen Salisbury steaks w/any side (fries, Mac and cheese, potatoes any way, noodles)
From leftover mashed potatoes, make potato lakes. Potato cakes. Meats turn into casseroles, stews, and soups. Veggies into the same as meats. Especially if there's isn't enough by itself for a whole meal.
Bean and cheese burritos. Knorrs Spanish rice, can of refried beans, tortillas, and cheese. follow the directions on the rice package, when done, add the beans and cheese. Roll them up and you are good to go. Salsa or hot sauce to fancy it up.
All the veggies are to be diced, I prefer Bush baked beans. Saute onions, peppers, and beef til cooked, then add everything else. Simmer about 30-45 minutes. It makes a ton but freezes beautifully for a future lazy day meals.
