We call this "pork stuff". It's amazing and easy!
Cook the pork chunks in a frying pan with a little olive oil and water. Meanwhile, cut up 2 green bell peppers (1/2" chunks) and dice half an onion. Throw the green peppers and onion in with pork with a little minced garlic or garlic powder, and cover until cooked, stir occasionally to keep from scorching.
Add 2 cups brown or white minute rice, 2 cans cream of mushroom soup, 1 can water and a can of sliced mushrooms. Turn to low, cover and simmer for about 20 minutes, stirring occasionally. Top with a little bit of soy sauce. We serve with slices peaches or pineapple.

Or tacos.
I either use the Goya marinades or I season with salt, pepper, paprika, garlic powder, onion powder, tajin and then finish it with fresh lime juice.
