@veryconfused okay for the rice! I usually make this amount for just my husband and me.
We are lucky enough to get rice from Brazil which is called Tio Juao (Uncle John)
But using Jasmine is very good as well!
I wash my rice by rinsing it a few times and drain it a bit.
For one cup of rice, I use a tablespoon of butter and saute the garlic just for a minute or two till it's tiny bit soft. Then I saute the rice for a minute or two.
For my electric stove and the way that it cooks, one cup of water is enough since it has already been rinsed.
Then I add a teaspoon of chicken bouillon,
Bring it to a boil and then I quickly put the cover on and shut the heat off. And since I have an electric stove the residual heat cooks the rice for 20 minutes.
I give it a stir and it's delicious.
But you have to play around with your own stove, the key is really the butter, the garlic salt and chicken bouillon.
Now I'm no expert nor am I Brazilian so I don't know how authentic this is lol.
But everyone that comes over loves it so...
I saute a couple of pieces of very finely chopped bacon In a cast iron skillet until it renders it's fat.
Then I add about half of a very finely chopped onion,
And a clove of garlic.
I lower the heat so that's bacon doesn't burn.
I add a little bit of cumin.
And then I add a rinsed can of black beans, and mix that around and then about maybe a cup of water or so. A little bit of chicken bouillon.
Couple of bay leaves. Let it simmer. It will soften even though it's canned, it's still needs to soften.
And I like mine little brothy, but add as much water as you like. It's not actually soup, but it's it's really nice to have the juice kind of swimming around with the rice lol. So keep an eye on it. Add more water if needed, lower the heat, etc. The bay leaves are key in this dish and gives it a really yummy flavor.
Taste delicious with grilled chicken and a yummy simple salad with a lemon vinaigrette.
It's the simplest most comforting dinner and everyone loves it and it's so easy and cheap!
