Creative Rice & Noodle Recipes (No Casserole or Spaghetti!)

Fried rice:
Cook your rice however you do ahead of time. Then, in a pan, add a drizzle or two of oil. Add veggies (I do diced onions, small diced carrots every time; then I add what I may have in fridge: broccoli, shredded cabbage) to cook until tender (about 3 mins). Push to side of pan; add 2 eggs (3 people in my family) to pan to fry. Break up the fried egg, stir with veggies, add cooked rice, and some soy sauce, pepper, and a little garlic powder. Keep stirring, incorporating all together. If I have frozen peas, I'll add about a third of a cup in now and heat through.
 
Rice pilaf! The recipe I use (long gone as have made it so many times) uses rice, spaghetti/vermicelli broken up browned in butter, bouillon cubes, boiling water, tight lid, cook until tender. I do not add seasoning or veggies, can use beef or chicken bouillon (I like beef better but depends on the rest of the meal). When liquid absorbed and rice/pasta cooked, stir in a little more butter and enjoy. Easy to change quantity. I cook for "no cheesers" so this is a win here!
 
japanese curry! dice potato, carrot, onion, whatever protein, and follow directions on store bought curry base. serve over hot rice. OR, homemade poke bowls.
 
Stuffed Bell Peppers (,ground turkey or hamburger meat)

Enchiladas and you can make your own Mexican rice to go in them or serve on the side. What I like to do is make enchiladas like usual but instead of using tortillas to roll it, just make some rice and mix it in.
Also, I make this for the kids and I, we love it. I call it Cajun goulash 😆
1smoked sausage (whatever kind you like, my fav is Beasley's) cooked
1c rice prepared how rice is usually prepared (I usually add a bay leaf and italian seasoning for flavor and a pinch of salt)
1can lesueur tender baby carrots (any kind works those are just my favorite), corn, chopped onions, sauteed. cook the carrots in a little chicken bouillon for extra flavor
Mix together 😋 so good!
 
I cut up chicken, pan fry with mushrooms, carrots, coloured peppers..add a little honey garlic sauce.
This can be served with/over rice OR over buttered noodles with garlic and Parmesan cheese
 
Easiest recipe ever for rice!!!
3-4 chicken breast (frozen or thawed will work)
1 medium sz jar of picante sauce or similar
1 can of pinto beans (large or small)
White rice (cooked)
Throw chicken in crockpot top with salsa and beans and let cooked on low for 4-6 hours!!! Throw over some white rice! You can add cheese,tortilla chips, chives, sour cream…whatever tickles your fancy! Its sooo good and super simple!!!
 
I make pork chops over a bed of rice.
Put pork chops in oven pan with cream of mushroom soup on top.
Make a box of stovetop stuffing (I prefer chicken flavored for the pork chops)
Put the stuffing on top of the pork chops and cream of mushroom soup. Bake at 375 for about 45 minutes. Serve over rice 🥰

No peek chicken bake
2cans cream of chicken (or one large can will work)
2 cups rice
1 cup milk or chicken broth
1 cup cheese (optional)
1lb chicken tenderloin (or chicken breast works too)
1 packet onion soup mix
Set oven for 350. Mix all ingredients together except chicken and onion soup mix. Spray baking dish and put mixed items in. Lay chicken on top and sprinkle the onion soup mix on top. Cover with tinfoil and bake for 1 hour (no peeking)
 
Cubed chicken, steamed broccoli, rice and a bottle of any Asian sauce. We prefer LaChoys sweet and sour. Walmart even has frozen premade egg rolls you could toss on the side
