How Do I Get Breading to Stick on Homemade Fried Chicken?

Whatever way you do it, have a "dry" hand and "wet" hand, make sure your oil is hot enough and put the breaded chicken into the fridge for a few mins before cooking.

Soak in milk or buttermilk. Add Cornstarch to flour. Place chicken into flour then egg then flour or breadcrumbs. Make sure oil is Screaming hot before you lay the first piece into pan.

Bisquick seasoned however you'd like. Just shake the chicken in it place chicken in a glass ovenproof pan that's has oil heated up in it from the oven. Place chicken in the hot pan and bake for about an hour turning half way through the time. Always perfect and always yummy

I always check my oil by dipping a wooden utensil in and seeing if it bubbles up around it. If it doesn’t, the oil isn’t hot enough yet and the breading will dissolve away into the oil. Outside of that, I usually take my unthawed chicken and put it in egg wash, then coat it with seasoned all purpose flour, then put it in the oil when it’s ready. If some of the breading comes off before I get it to the pan I might hit it with the egg wash and flour again and then it’s all good. 🍗 👍
