Looking for Easy Chicken Leg Recipes – Tired of Baking & Lemon Pepper Seasoning

Recipe for Crack Chicken Spaghetti!😉
Cook about a pound of chicken(cubed) and about 6 strips of cut up bacon, I cooked them together because why dirty up extra dishes when it's not needed! And while your doing that boil 8oz of spaghetti noodles.
Pre heat your oven to 350
Then I took a can of cream of chicken, 1/2 cup of Chicken broth, 8oz of Velveta cheese(cubed) and 2 table spoons of dry ranch seasoning mix & put that mix in a medium sauce pan and let it come to a boil and stir consistently.
After all of that is done, add the spaghetti noodles to the mix and then stir in the chicken and bacon pieces.
When that's all done lightly butter a 9x9 casserole dish, I sprinkled 1/2 cup of shredded cheese before I pouring in the mix to the casserole dish. Then after you pour the mix into the pan and evenly distributed I topped it with a cup of shredded cheese and about 3/4 of a cup of green onions!
Cook in oven for about 30 minutes or until its bubbly!
 
Crack Chicken Casserole
INGREDIENTS:
• 1 rotisserie chicken, shredded
• 2- 8 oz brick of cream cheese
• 2 cups shredded fiesta blend cheese
• 1 tsp salt
• 1/2 tsp onion powder
• 1/2 tsp garlic powder
• 1 tsp parsley
• 1 (1-oz) packet dry Hidden Valley Ranch seasoning packet
• ½ cup chopped cooked bacon
INSTRUCTIONS:
1. Preheat oven to 375 degrees
2. Put small amount of olive oil in bottom of glass 9 x 11 baking dish
3. Place shredded chicken in baking dish evenly. Put 1/2 cup water to prevent chicken from drying out. (May also add 1/2 cup milk or heavy whipping cream if you prefer)
4. Sprinkle salt, onion powder, garlic powder and ranch seasoning over chicken.
5. Place softened cream cheese on top, covering entire casserole.
6. Sprinkle bacon and fiesta blend cheese on top
7. Bake for 30 minutes, or until heated through. I like to broil for the last couple of minutes to crisp up the cheese and then sprinkle with parsley and serve.
NOTES:
• Do not make the ranch dressing. Use the mix dry.
• Can reduce the amount of Ranch dressing mix to your personal preference.
• Can also make without the bacon. Or double it,
 
Hawaiian Chicken Thighs (Crockpot)
6-8 Bone in, Skin On Chicken thighs
1 can crushed pineapple in pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
Salt & pepper to taste
Dump all together and cook on high 4 hours or low 8+ hours
Pull out of crockpot and broil skin side up for a few minutes
I reduced the sauce from the crockpot to thicken a little bit. Served with white rice & corn 😋
 
Garlic honey crockpot chicken thighs!
feeds 4-6 people
2lbs boneless skinless thighs
2tsp-Minced garlic
1/2 tsp-oregano
1 tbs - dry parsley
1/3 cup- honey
1/2 cup- ketchup
1/2 cup- soy sauce
***to add some heat***(optional)
1 tsp- Cayenne pepper flakes
Directions:
1-Lay chicken in bottom of crockpot
3-Mix all other ingredients in a bowl and pour over chicken
4-Cool on high for 5-6
Hours or low for 8-10 hours
Suggested sides- rice, broccoli, potatoes of any kind, corn, asparagus, Lima beans, green beans..... pretty much goes with anything!
 
The rotisserie seasoning from pampered chef is amazing on chicken. I just season and throw them in the air fryer. I usually to chicken thighs occasionally legs. I like to use garlic salt, pepper, tajin, ranch seasoning OR that rotisserie seasoning.
 
Apricot chicken is nice but it depends on how fussy partner is?. It's just tin apricots, French onion soup and chicken drumsticks cooked in slow cooker.
 
Ok one of our fav seasoned chicken is Lawry seasoning with paprika. The other is curry and paprika. Both bake up so crispy a juices are so flavourful! We pour over white rice! But I use full chicken legs and thighs for chicken chicken soup. Boil to make the best broth when don't have whole chicken. And simple too just onion, celery and carrot salt and pepper. Simple basic and delicious with egg noodles, rice noodles or any kind of noodle you like. I will add curry, tumeric,cumin, and garlic powder to the broth with some parsley. Touch paprika too. Gives it a more common chicken soup taste. And sometimes I add just lemon juice to it. So good!
 
Put a little water in a casserole. Add chicken pour BBQ on the chicken. Bake, covered with foil, about 45 minutes, to an hour on 375°. Drain the water, brush on some more bbq sauce and bake uncovered an additional 10-15 minutes

Throw your chicken in the pot,
Add sliced onion
add equal amounts of soysauce vinegar and water add seasonings I use Italian seasoning
Add can crush Pineapple
let it summer till chicken done then serve with rice.
Put sliced onion on bottom pan
Throw chicken on top
Add
1 cup honey bbq sauce with 1 tbsp mustard
1 cam crushed pineapple
Simmer til done
Serve wit rice or noodles
 
I use garlic herb seasoning, onion powder and cook it on the stove in avocado oil and butter. It’s SO good! I do it with chicken breasts too
 
You can make a yellow rice with the chicken inside. I usually do the chicken in the oven too but seasoned it with salt, pepper and garlic( the one that comes in the jar)
 
I like 2 bake them but plan on using them with different sauces. Like one night we will have a couple with Buffalo chicken wing sauce, Panda Express has a lot of good sauces in the grocery store now. Like Mandarin, (it is a teriyaki) there is a kung pao sauce, an orange chicken sauce, a sweet and tangy bejing sauce. One night I will bake some diced potatoes, carrots and onions in a pan, have a couple drumsticks with it and cover it all with cream of chicken soup. One night can be BBQ sauce, one night can be a broccoli, Cheddar rice and the chicken, one night with pasta and alfredo sauce... Another with jerk sauce... Yet another with lemon and herb...Sooooo many options!!!
