Looking for Healthy Crockpot Recipes: Quick Prep & Budget-Friendly Options?

Hello everyone! What are some of your favorite healthy crockpot recipes?
I have 20-30 minutes in the morning before work to prep the ingredients. As a busy, new mom, crockpot meals make my evenings so much easier. But I’m also still trying to lose babyweight so healthy is important. I’m also on a budget, so I’m open to any type of recipe!

Taco soup is a favorite at my house 🙂
 
Prep what you can the night before (or even prep for the week on the weekend) and throw it all in a ziplock. Then you can just toss it all in the crock pot in the morning.
 
@16023 I agree with prepping ahead. I marinade my meat and add herbs or veggies into a ziplock to just dump and go or I freeze them and pull one out the night before and same, dump and go
 
@16023 I’ve tried prepping for the week and it seems like the veggies just get a little too freezer burnt or have a frozen taste😓
Maybe it’s just my freezer but I’d love to be able to prep everything on a Sunday for the whole week!

if you have a little extra time some evenings, prep the meal inside the crockpot, cover & put in the fridge overnight. Remove it from the fridge in the morning & use the 20-30 mins to let the chill come off of the crockpot. Set it to cook before leaving 🙂
 
Cowboy crock pot roast!
- 2lb chuck roast mo
- 1/2 cup of jalapeños peppers (chopped)
Diced potato(preferred)
- Diced onion(1/4 qt cut)
- fire roasted peppers(jared)
- 1 can black beans
-1 can of corn
-I can crushed Tomatoes (preferred)
So i marinated the chuck roast in Jalapeño juices with onion and fire roasted red pepper, celery,potatoes,half beef broth,half vegetable broth. Let that simmer for about 10hrs or so......on HI cook or 12hrs on or on Low for 15hrs...depends on the tenderness you want to achieve 🙂
*feel free to add or subtract ingredients. I definitely encourage you to make it your own: pour it over rice,corn bread,other beans, make a wrap,a burrito bowl,soup,add it to Ramen m, add it to Mac m Cheese, make stuffed Pasta shells (manicotta, jumbo) etc. 🙂 so many things you can do with this recipe
