Looking for Healthy Crockpot Recipes: Quick Prep & Budget-Friendly Options?

I lived by a couple that did all their cooking for the week Saturday night and Sunday morning. They would fix 3 or 4 meats and all the sides. They would have a big meal on Sunday and they had Tupperware plates that they would fix meals in and refrigerate. Each day they would get the plate they wanted, heat it and eat.
 
@lastlady2012 food that is cooked, will stay from Sunday to Saturday. When warming up be sure it’s completely warmed up. They weren’t warming up and putting back, they warmed up each plate.

On YT go take a looks see at OUR TRIBE OF MANY. Go to the recipe section of her playlists. So many meal prep ideas as she does so for her LARGE family. It saves time and money. She’s got a fixed budget to feed her large family. I’m sure this will work for all and not just two people yet many or even one.
 
I use lazy day cooking club. I prep 1 day and have meals for weeks. I can alter the recipes to make them as healthy as I need them. For example if I don't want pasta or rice I can swap it for speghetti squash or potatoes
 
1 lb Boneless chicken breast
1 block cream cheese
1 jar salsa of choice (best with spicy salsa if you like it in the spicier side)
1 can black beans (optional)
1 can corn (optional)
Put chicken evenly on bottom of crock pot
Chunk block of cream cheese on top of chicken
Dump full jar/container salsa over chicken and cream cheese
Cook 6hrs then shred chicken with 2 forks and mix together
Serve with tortilla chips or soft shells or rice
Toppings of your choice
 
@surendrd no water just the salsa it creates plenty of liquid. I have an old crockpot so I put it on high then turn it down to low and it can easily go 8hrs on low.

These are for the crockpot. I use the McCormick packet for the chili and the beef stew. Also add a bag of frozen corn and a bag of frozen green beans. I tweak it a little and use a bag of baby carrots, a bag of baby red potatoes and definitely more celery then it says. I prep them the night before in the crock and put in the fridge, then just start it in the morning and I always do low for the max amount of time the recipe says. Don’t forget the crockpot liners!!
 
You can find alot of Mediterranean crockpot meals online. Very healthy. I actually have a slowcooker cookbook I ordered on Amazon. Make Mediterranean alot.
