My Garden Zucchini is Overflowing – Need New Dinner Recipes!

We cut in half and scrape oit the seeds and fill with just about anything. We take italian sausage and stovetop stuffing and mix then put cheese on top and bake. It's pretty good.
 
I cook sliced zucchini and summer with diced tomatoes and onions on stove top. Add crispy bacon and put over rice. I like with parm cheese but not needed
 
This week I had 2 giant zucchini so we made it three ways, pizza tempura battered, and bacon sausage hash
 
Shred it, bag it up in usable size ( 1 or 2 cups) depending on recipes for bread, muffins, cakes then freeze for later use. Or cut as you would for a meal, or roll in breading lay flat on baking sheet in freezer, when frozen place in freezer bags for meals later.
