Need Tomato Recipe Ideas – My Dad's Garden Gave Me a Bumper Crop!

We have a small chopper, we use all fresh ingredients, cut up some tomatoes, gr pepper, jalapeno, onion, garlic or garlic powder, add some lemon or lime juice and cilantro and chop as fine as you like it. Ours usually only last a couple days in frig before it's gone. We used it w chips, on burgers, tacos too.
 
I had company come over one evening and I scrambled for some snacks... I took hamb buns, spread a little olive oil on, sliced tomato next a little more olive oil, minced garic, and Italian seasoning, provolone or mozzarella cheese (I've done it with parm. too) Black olives if you have- put in a pre-heated oven (400) and cook for about 6 mins.
