Cut into rounds, approx 1/4" thick, salt, pepper, garlic, toss in a ziplock bag with olive oil, rub to coat.... bake or air fry, after dipping in bread crumbs and parmesan cheese
Using a large oiled casserole dish, I cut both types of squash in discs, laying them in the bottom. I add cut mushrooms and onions. ( sometimes fresh tomatoes too.) I then add Italian seasoning and some garlic powder, pouring spaghetti sauce on top adding a handful of shredded cheese. Then do a 2nd layer. Viola, vegetable lasagna!! Mmm-mmm!
mix with italian dressing and roast in the oven or air fry — one of my favorite ways to enjoy zuchini and squash! i usually add in some bell peppers and onions as well
