Can I have your best authentic sopa de fideo recipe, please?!? My fiancé is under the weather and said his grandma made the best - I hope to make something close?!? Please help!
I brown my fideo on medium heat, add water about 4 cups (we like it soupy), add a can of tomato sauce, chicken and tomato bouillon, seasoning salt and garlic salt to taste. Let it come to a roaring boil and turn down the heat to low and cover for 10-15 minutes. Perfect every time for me!

Mine is similar
2-3 boxes fideo.. depending on how many u need to feed. Brown fideo and 1/4 of chopped onion
Once browned add water to cover 2 inch above fideo.
Salt, pepper, garlic powder, comino, Adobe season all, pinch of cheyenne pepper , 1 chicken bullion cube, can tomato sauce and half can southwest corn and half can rotel. Bring boil then lower to simmering on low and cover for 10-15 minutes.
I also mix corn can and rotel leftover in a freezer ziplock to use another time for rice, fideo or picadillo.
Heat up about a serving spoon of oil add the small bag of fideo add a piece of onion stir it around until is a nice dark golden color add can of tomato sauce or blend a large tomatoe in the blender add 3 or 4 cups of water and add knorr suiza chicken bullion and let it boil in til it’s soft
