Chili beans with hamburger meat - soak dried pinto beans overnight in Dutch oven or crockpot. Rinse 3 times. Fry 1-2 lbs of hamburger meat. Chop up large onion, add to pot . Season with salt, pepper, garlic powder and 2 tablespoons of chili powder, and 2 shakes of dried chili flakes. Stir. Add 1 large can of tomato sauce or tomatoes. Stir until mixed up. Cook on low until almost done, taste broth and add more spices if needed. Cook until tender. Make fried potatoes and cornbread.
Irish stew - cut chuck roast into 1 1/2 inch pieces, flour meat and add a little oil to bottom of crockpot or Dutch oven. Sear meat on all sides, and scrape bottom of the pan, do not toss flour, cut up 1 large onion into pot, add 2-3 cups of water. Add 1 large can of tomato sauce or tomatoes. Stir, add spices, salt, pepper, garlic powder and 2 tablespoons of chili powder and 2 shakes of dried chili flakes. Stir, cook on low for 1 - 2 hours, peel and cut up 4 -5 large potatoes in 2 inch pieces, peel and cut 4 large carrots into 1 inch pieces. Taste broth and add more spices if needed. Cook until tender. Serve with garlic bread and a vegetable.
Chicken surprise - cut 2 chicken breasts into 1 inch pieces, saute, cook 1-2 boxes of stovetop stuffing,add chopped onions and celery, cook as directed. Mix chicken with stovetop, add 1 can of Campbell's cream of mushroom and a can of cream of chicken soup with 1 - 2 cans of milk. Stir until mixed. Completely covering the top of casserole with grated cheddar cheese ( either mild medium or sharp) on top,bake in 350 degree oven for 30 minutes. Serve with mashed potatoes and cranberry sauce.
Chuck roast pot roast. In crockpot or Dutch oven add a little oil to bottom of the pan. Flour meat on all sides. Sear in the bottom of pan. Do not remove flour bits. Cut up 1 large onion into fifths. Add to the top of the roast. Add salt, pepper and garlic powder to roast. Cook 1-2 hours. Peel and cut 4 potatoes in half and add to pot,peel 4 carrots and add to it. Cook on low,stir pot, and if you want a thicker gravy
add flour to cup of water, stir until smooth and add to to pot stir until smooth and no lumps.
Tamale pie - fry 1-2 pounds of hamburger meat with chopped onion. Add 1 large can of tomatoes. And stir,add water if needed,add salt, pepper, garlic powder and 1-2 tablespoons of chili powder. Stir cook 1 hour, add frozen corn and black olives, both sliced and whole, use whole can.slowly add Albers corn meal and mix turn off and add grated cheddar cheese to top, completely covering the top. Put lid back on and when cheese is melted.eat. I like it with sweet coleslaw. Pour 1- 2 packages of coleslaw into bowl. In measuring cup add 2 cups of Best foods mayonnaise, 1/3 cup of red wine vinegar, 1/4 cup of sugar and 1/3 cup of milk, stir and taste, add more mayonnaise, red wine vinegar, sugar and milk to taste.
Chicken salad - Cut 2 large chicken breast into 1 inch pieces. Cut or tear 1 large head of iceberg lettuce, add grape tomatoes, , cucumber , grated cheddar cheese, chopped gala apple, chopped avocado, chopped cooked bacon or bacon bits, add sunflower kernels, croutons, blanched raisins ( add 1 cup of water to measuring cup add raisins, cook in microwave for 2 minutes) pour out liquid,dry on paper towels and remove all of the stems. Add thousand Island dressing or dressing of your choice. Very yummy and filling. Serve with garlic bread.
Mom's meatloaf - 2 pounds of hamburger meat, 1 large chopped onion, 2 eggs, salt, pepper, garlic powder and 2 tablespoons of chili powder, 1 can of Campbell's vegetarian vegetable soup, and 1/2 cup each of frozen corn,peas and Lima beans. And 1 1/2 sleeve of saltine crackers crushed. Mix well and form loaf. Put it into a baking dish at 350 degrees for 1 hour and 15 minutes or until done. Meanwhile take a large can of Campbell's pork and beans, add 3/4 pound of cooked bacon cut into 1 inch pieces, add 1/2 - 1 bottle of barbecue sauce, 1/2 cup of brown sugar and 1 Tablespoon of hot dried mustard ( located in the spice aisle) stir and cook in crockpot for 1-2 hours.make mashed potatoes.

Enchilada casseroles - fry hamburger meat with onions, add salt, pepper, garlic powder and 1 Tablespoon of chili powder. Add Las Palmas red enchilada sauce to skillet, cook 1 corn tortilla at a time and turn over. In large baking dish, completely cover baking dish with the tortillas, add hamburger meat and grated cheddar cheese and black olives, repeat layers until you have 3-4 layers. Completely covering top with cheddar cheese. Cook in 350 degrees oven for 30 minutes or until cheese melts. Serve with Spanish rice and refried beans.
Cheese and onion enchiladas, cook and layer corn tortillas in Las Palmas red enchilada sauce, layer tortillas onions and cheese, bake in 350 degrees oven for 30 minutes. Chicken enchiladas Cut cooked chicken into 2 inch pieces, add white enchilada sauce and make with flour tortillas. Add grated cheese on top and bake for 30 minutes at 350 degrees oven.
