Budget-Friendly Meal Ideas for 2 Adults & 1 Toddler: Quick, Easy Recipes with Leftovers

So I’m trying to cut down on my grocery bill but I’m struggling to think of some cheaper meals that will feed 2 adults and 1 toddler with leftovers for lunches the next day. Hit me with all your cheap easy quick meals that aren’t gonna break the bank! Ingredients and recipes included please!
 
You can’t ever go wrong with pastas, salads and sandwiches. Buying in bulk at Sam’s/Costco can help portion meals out.
 
Grill some chicken and make pasta salad make that for the week of lunches. I like Mac and cheese mixed with some ground beef. Cabbage and kielbasa or potatoes and kielbasa
Roast is good for a few meals
 
We love quesadillas (with the shredded chicken you can do multiple things). One night we do regular quesadillas, with traditional stuff , salsa sour cream, etc ….the next nit we do bbq chikcen quesadillas with fries or some sort of side .
Obviously spaghetti and lasagna
Big “breakfast for dinner/ lunch. “ …. Think sausage bacon pancakes/ waffles eggs etc. can make a big batter and do pancakes AND waffles. So that the next day is a little different.
We love doing breakfast burritos. ( egg cheese and meat wrapped in tortilla , cooked till crispy .)
 
Nachos / chips and dip is a good side that last for a few days. The chikcen can also be thrown on rice or chicken Alfredo. …. Or just as a side, even in a salad. Shredded chicken is definitely a weekly thing for us in SOMETHING. ……… a side of meat and mashed potatoes or macaroni ! ….. we mix up salads with big enough portions to have the next day. (Leave out the croutons and dressing until ready to eat ) ……. We love fixing a lot of bacon and then doing BLTS the next day .

Chicken teriyaki stir fry:
1 pack chicken thighs
1 bag frozen stir fry veggies
1 egg (optional)
Rice
Teriyaki sauce
Cook the chicken, add your marinade and veggies, cook your rice & enjoy! If you opt to do an egg, scoot your meat over and cook the egg.
Beef & shells
1 Lb hamburger
Crushed tomatoes
Heavy cream
Beef broth
Onion, garlic
Cook your ground beef
Add onion & garlic when meat is halfway done.
Add your tomato sauce , let simmer for 10 min
Add heavy cream
Cook noodles as desired and add to beef mixture
 
Cheeseburger subs & fries:
1 lb ground beef
Seasons of choice
Buns
Cheese
Cook ground beef, drain grease & season.
Toast buns
Put ground beef on buns & add cheese
Cook fries
 
Meatballs- you can add them to pastas, subs, or eat them on their own. And one bag usually lasts multiple meals.
Salad wraps. Just get a salad kit if you’re looking for easy and add a protein! Chicken Caesar Salad wraps are BOMB!
Quesadillas- pizza, cheese, chicken , breakfast. Soo many options
Breakfast burritos- great for breakfast or dinner, with lots of leftovers usually.
 
Crockpot chicken tacos
2-3 chicken breast
1 16 oz jar of salsa
1 block of cream cheese
Cook in crockpot on high for 3 hours or on low for 4-5 hours. Shred chicken after cooking and then let simmer for 15 mins after shredding before eating.
My boyfriend and I make this all the time it feeds us and his 2 kids plus leftovers whenever we make it. Everyone can customize what they want on their tacos and the meat is easy to reheat.
 
I do a version of this that makes less of an impact on the wallet: chicken breasts (I wait for BOGO sales), can of black beans rinsed and drained, can of rotel, pack of taco seasoning. Low for 4 hrs, shred. We make soft tacos 1st night, leftovers can be made into quesadillas or nachos.
