How Do I Get Breading to Stick on Homemade Fried Chicken?

Double dipped. Dip in Water, shake in flour, dip in egg/milk mixture, shake in flour, instant potato flakes, spice mixture make sure oil is hot by taking a drop of water and make it pop. Then it's ready. Sounds like oil is too cold.
 
Make sure your oil is hot, that you pat the chicken dry before egging and breading. Pat dry, flour, egg dip, than flour again. Place in hot oil.
 
My mom always uses a cast iron skillet and pats dry with a paper towel after cooking. Nothing fancy for the recipe, just some flour, and black pepper.
 
Seasoned Flour, egg wash, whatever breading you want to use, egg wash, breading again…then LET SIT…that’s super important because they breading and flour have a chance to become sticky and adhere to the chicken.
Also, just out the fridge chicken works the best.
 
I’ve been told wet doesn’t stick to wet and dry doesn’t stick to dry. So begin with your chicken in wet mixture, then into dry mixture. Right into frying pan/oil. Don’t try to turn if the chicken if it is still sticking to the pan, wait until it is loose on its own
 
I dip the chicken in a bowl of evaporated milk and 2 whipped raw eggs.Then in another container I have all purpose flour that has salt and pepper.Shake the chicken up and then fry the chicken in a pan of canola oil.
