How Do I Get Breading to Stick on Homemade Fried Chicken?

Chicken patted dry w paper towel. 2 Eggs mixed by fingers till blended. Dipped in a plastic bag filled with salt ..pepper...planko crumbs...self rising flour. Shake a few pieces at a time to coat evenly. Rest a few minutes. Place in heated oil that covers the pieces by half. Place meat side down. Cook for 8 to 9 minutes. Use meat temp to check before turning meat right side up. Cook another 8 to 9. Drain on paper towels. Cook time can be adjusted on the pan used.
 
Mix flour with the seasoning of your choice in a gallon ziplock bag add chicken and shake well let sit for about 10-15 mins the place in iron skillet or electric skillet with lid I promise breading will not fall off
 
Make sure you are using a heavy cast iron, not a skillet with the non stick layer worn off. Make sure the oil is hot enough and that you see brown around the edges before turning it over. It's not healthy but coating sticks a lot betterto chicken with the skin on. Don't over crowd the chicken in the pan or it will lower the temperature of the oil and it will basically boil instead of fry.
 
I gave up. Tried several times. I buy Publix now. Must be equipment to cook ot I don't have. I think a deep fryer is the answer.
 
Use flour, egg wash, bread crumbs then after that process is done put them in the fridge for 30 minutes to an hour
 
2/3rds flour, one 3rd corn meal. Mix with spices. Dunk in egg mix and milk ( I like using buttermilk) and flour mixer....hot oil and fry.
 
I just salty and pepper chicken.
In a bowl put 2 or three eggs and stir like scramble eggs l add some salt and pepper in it just a little.
In a a baggie or a produces plastic bag I add flour. I put a few pieces in bag and shake so flour is cover on pieces till all are cover.
Heat cooking oil to hot in skillet and add chicken after shaken and keep adding till all chicken in skillet. I turn chicken over several times till done. Sometimes l lower heat if cooking to fast. Do not let it burn that’s why l keep turning over. Make sure it’s not bunk inside. Chicken has to be cooked all the way threw. I put each piece on the paper towel to soak a little grease off.
Can use white gravy packets for gravy or make your own.
I made it myself but now l make big packages and freeze to use for different meals like for pork chops, put on corn bread and beans. Chicken fried steak. Best thang l was taught by my daughter in Law to make gravy and Freezes. I even used it to dip French fries in it. I also like Gravy on just toast. I freeze in baggies and but in microwave to thaw out and then stir in pan. Sometimes l might add water if to thick.
My husband said l make the best fried chicken he has ever eaten. I also fried the organs like that also. I do not care for organs but he does.🫧🩵🫧
 
Always flour first, so the egg has something to stick to. Then crumbs, making sure to press it down in the crumbs firmly. If your oil is not hot enough, it can push it off the food.
