Kelly’s Turnip green soup
* 1 package kielbasa or smoked sausage diced
* 1 onion, chopped
* 2 cans turnip greens undrained, I use great value brand
* 2 (16 oz) cans chicken broth
* 1 (10 oz) can Rotel tomatoes with green chilies, undrained
* 1 (14.5 oz) can Hunt's petite-diced tomatoes, undrained
* 1 can pinto beans or light red kidney beans rinsed and drained
* 1 can black-eyed peas, rinsed and drained
* 1 can great northern beans rinsed and drained
* 1/8 - 1/4 teaspoon garlic salt, or to taste
* 1/4 - 1/2 teaspoon Creole seasoning, or to taste (such as Tony Chachere's) this can be left out or you can make it as spicy as you want.
1 package knorr vegetable seasoning mix
Add everything to your pot, let simmer 30 minutes uncovered. You can add more chicken broth or even tomato juice if needed.
 
Brown ground beef with onion and season to liking add cubes potatoes and a can of each vegetable to ur preferences I like the following
Corn
Green beans
Carrots
Tomato sauce
Season to liking boil til potatoes soft
 
In a crock pot. Beef meat. Frozen mixed vegetables. Can of pototoes. Some carrots. Beef broth or water to cover that. On high for 4 hrs. Then add 2 beef stew season packs and high for 4 more hrs.
 
Chili in the crock pot is so good. Fry the hamburger. Drain the grease off. Put it in the crock pot with tomatos tomato sause. Peppers. Onions. Kidney beans. Cook for 4 hrs. Add 2 packs chilli seasons and cook for 2 more hrs. I like mine spicy so that's why I add 2 packs
 
Escarole and bean soup:
1 large or 2 small heads of Escarole - rinsed very well, dried then chopped.
1 can cannellini beans rinsed
2-4 cloves fresh garlic minced( depending on how much you like garlic and how large the cloves)
Red pepper flakes
1 box low sodium chicken broth
Grated cheese
Extra virgin Olive oil
1. Heat 1/4 c olive oil in a deep fry pan or large pot on med high heat
2. Add garlic- sauté until the garlic starts to go golden & red pepper to your liking
3. Add escarole & stir the garlic from the bottom to prevent burning- cover
4. Stir the escarole until it starts collapsing lower
5. Add broth then rinsed beans
6. Simmer 10-12 minutes until escarole has softened
7. Serve with grated cheese and fresh croutons or crispy Italian bread
