My very first and most lasting nostalgic college recipe:
- angel hair
- olive oil
- fresh garlic
- oregano
- cayenne
- parmesan
That's it. Cook angel hair in a pot, takes like 4 minutes. Mince garlic. Drain pasta, mix with olive oil, garlic, oregano, a bit of cayenne, and parmesan. Cheap, easy, super quick, nonperishable. I learned it in college and it's stayed with me.
Also:
- pack of ramen (chili ramen is the best imo, green packet)
- egg
- everything bagel seasoning
- green onions
Start a pot of water on the stove, medium heat to poach an egg. After you've dropped the egg in, start another pot for the ramen. Cook the ramen 2 mins. Chop some green onions. The egg should be done by then. Scoop it out. Put the egg in the ramen, add the green onions and everything bagel seasoning.
If they're open to ethnic foods and have access to a rice cooker, they can make dal:
- moong dal
- basmati rice
- if you want to go all out, you can use actual onions, garlic, ginger, and tomato. Otherwise, powdered works for everything and you can leave out tomato.
- asafoetida and turmeric would be nice but not absolutely necessary
Cook rice in rice cooker, 1 cup rice to 2 cups water.
Start dal in a pot, 1 cup dal to 2 cups water. Add a pinch of turmeric if you have it. Bring to a boil, then simmer until the water is basically gone. Dal should be soft if you smush it. If not soft, add a bit more water and continue simmering.
If you have fresh garlic, onion, ginger, and tomato, fry those up in a bit of oil on the side.
Once both dal and seasonings are done, mix together. Add a pinch of asafoetida if you have it. Salt to taste. Eat mixed with rice.
Chana (also Indian):
- 2 cans garbanzo beans
- tomato sauce
- onion
- ginger
- garlic
Drain and rinse garbanzo beans. Chop 1 tbsp ginger, 1 tbsp garlic, a quarter of an onion. Heat oil on stove. Add ginger, garlic, onion. Add 2 tbsp tomato sauce. Add garbanzo beans. About 1 tsp salt. Stir, cover, and cook on low heat. Add a tiny bit of water to keep it from burning. Once garbanzo beans are tender, it's done.
You can garnish with lemon juice, chopped tomato, onion, cilantro, and green chilies.
Quesadillas:
- tortillas
- shredded cheese (Mexican blend)
- any other toppings (I like pico de gallo, allrecipes has a good recipe)
Literally just heat a tortilla on a pan, add shredded cheese, fold over and cook till done. Add additional toppings as desired.
