Easiest enchiladas! Beef and cheese taquitos, as many as you want. 1 can of red enchilada sauce poured on top. Shredded cheese. Bake 350 for 20 mins. or until cheese is melted and bubbly. Or chicken and cheese taquitos. Mix green enchilada sauce with sour cream. Pour over. Cheese. Bake the same. So good. Make a big pan and have leftovers. Pioneer Women approved! I’ll never make enchilada from scratch again.
 
Here is an easy one:
Quick and Hearty Gumbo
Slice Kielbasa or Polish Sausage into coins and sauté in small amt of oil
Add 1 can beef (or) chicken broth
Add 1 can diced tomatoes (I prefer tomatoes with basil, garlic, and oregano but regular diced is fine)
Add 1 can whole kernel corn
Add 1 cup instant rice
Cover and simmer until rice is done, stirring occasionally to prevent sticking.
Enjoy
 
Oven Baked Mississippi Chicken
Ingredients:
• 4 boneless skinless chicken breasts
• 1 (1-oz) packet ranch dressing mix
• 1 (1-oz) packet Au Jus Gravy mix
• ⅓ cup sliced jarred pepperoncini peppers or banana peppers
• 1 stick butter, sliced
Instructions:
Preheat oven to 425ºF. Lightly spray a 9×13-inch pan with cooking spray.
Place chicken in the baking dish. Sprinkle with ranch seasoning and au jus gravy mix.
Top the chicken with pepperoncini peppers and top wtih butter slices.
Bake chicken for 45 minutes, until chicken reaches an internal temperature of 165 degrees.
 
Meatball subs: frozen meatballs, marinara sauce, mozzarella cheese, sub rolls - eat with chips, fries, fruits or whatever. Microwave meatballs in the microwave per the package directions, heat up the marinara sauce, put the meatballs in the rolls top with the marinara sprinkle with the cheese, put in a baking sheet into the oven on 400 for about 5-7 minutes until cheese is melted, or you can avoid the oven all together and microwave 20 seconds to melt the cheese but the oven gets the bread crisp
 
Honey Mustard Chicken
2Tbs honey mustard dressing mixed with 1/2 c melted butter
1 c Italian bread crumbs mixed with 1/3 c Parmesan grated cheese
Dip chicken in honey mustard mix and then shake in bag with bread crumbs
Cook 375 for 20 minutes
You can do this girls!!
 
Salmon and eggs:
Debone a can of salmon
Whip eggs for scrambling
Add some cheese
Salt & pepper to taste
Onion powder (optional)
Creole or slap your momma seasoning (optional)
Add salmon to egg mixture
Scramble on medium heat until eggs are done.
The size of can of salmon and the number of eggs depends on how many you are cooking for.
 
Also you can roll out canned Biscuits. Take canned Chicken and cream cheese in a bowl mix together. I add a touch of Frank's Red Hot. Put that in the biscuit then flip the top over (like a pocket) bake until biscuits are done.
 
KFC bowls. Bake chicken nuggets, make mashed potatoes, mix up a gravy packet, open a can corn. Layer everything in a bowl and sprinkle with cheese if desired.
 
Easy pizza:
Crust can be either French bread sliced long ways
Or pre-made pizza crust (found near can biscuits in store)
Or a pre made pie crust.
The easiest though is
A large flour tortillas
On medium heat fry on one side
Then remove from heat
Flip tortilla and apply pizza sauce cheese and topping of choice (to the fried side of tortilla)
Return it to the pan (if it was out of pan) and put it back on the medium heat. Cook until done.
 
Quick and easy fudge. 2 ingredients. 1 16oz jar of peanut butter and I container of cake icing. Any flavor of your choice. Put icing in microwave for 1 minute and the jar of PB for 1min. Mix together in bowl and when mixed pour on cookie sheet and chill for a couple hours. Cut up and eat so so good.
 
Red potatoes, cut in half. Small chunk of Ham or canned ham, bag of frozen Green Beans or peas. Put all ingredients in large pot, add 2 cups water. Cover and cook over medium heat until potatoes are ready to eat. Season to taste.
 
Chicken on the beach (3 ingredients)
Cooked diced chicken, Old ElPaso Cheesy Mexican rice cook per box instructions. Add cooked chicken half way through cooking. When finished top with queso cheese(I use gordos) eat like it is or use chips or shells. 😋
 
I like to cube a chicken breast, add cubed zucchini, mushrooms, yellow squash. Put in a bowl with 2-3 tablespoons of water. Add 1/4 - 1/2 packet dry pesto seasoning. Spread on an oiled cookie sheet for 30 min at 350 degrees and enjoy. Remember self care is one of the most important parts of getting through college. Everyday do something that makes you smile even if it's only for 5 minutes.
 
Chicken pasta. Pasta boiled add cream mushroom soup grated cheese and shredded chicken about $4 worth
Drain the pasta then place all ingredients into a Quichie dish n bake for 25mins (break up some crackers n put through as well maybe bout 7-9crackers)
Curried sausages n rice
Chops n eggs
Curried mince on toast
Sausages with tomato n onion gravy served with mashed potatoes
Make fried rice
Rice capsicum bacon pineapple onions celery cut up Boiled eggs (drizzle a bit of soy sauce through plus maybe Chuck in some chilli sauce)
 
My very first and most lasting nostalgic college recipe:
- angel hair
- olive oil
- fresh garlic
- oregano
- cayenne
- parmesan
That's it. Cook angel hair in a pot, takes like 4 minutes. Mince garlic. Drain pasta, mix with olive oil, garlic, oregano, a bit of cayenne, and parmesan. Cheap, easy, super quick, nonperishable. I learned it in college and it's stayed with me.
Also:
- pack of ramen (chili ramen is the best imo, green packet)
- egg
- everything bagel seasoning
- green onions
Start a pot of water on the stove, medium heat to poach an egg. After you've dropped the egg in, start another pot for the ramen. Cook the ramen 2 mins. Chop some green onions. The egg should be done by then. Scoop it out. Put the egg in the ramen, add the green onions and everything bagel seasoning.
If they're open to ethnic foods and have access to a rice cooker, they can make dal:
- moong dal
- basmati rice
- if you want to go all out, you can use actual onions, garlic, ginger, and tomato. Otherwise, powdered works for everything and you can leave out tomato.
- asafoetida and turmeric would be nice but not absolutely necessary
Cook rice in rice cooker, 1 cup rice to 2 cups water.
Start dal in a pot, 1 cup dal to 2 cups water. Add a pinch of turmeric if you have it. Bring to a boil, then simmer until the water is basically gone. Dal should be soft if you smush it. If not soft, add a bit more water and continue simmering.
If you have fresh garlic, onion, ginger, and tomato, fry those up in a bit of oil on the side.
Once both dal and seasonings are done, mix together. Add a pinch of asafoetida if you have it. Salt to taste. Eat mixed with rice.
Chana (also Indian):
- 2 cans garbanzo beans
- tomato sauce
- onion
- ginger
- garlic
Drain and rinse garbanzo beans. Chop 1 tbsp ginger, 1 tbsp garlic, a quarter of an onion. Heat oil on stove. Add ginger, garlic, onion. Add 2 tbsp tomato sauce. Add garbanzo beans. About 1 tsp salt. Stir, cover, and cook on low heat. Add a tiny bit of water to keep it from burning. Once garbanzo beans are tender, it's done.
You can garnish with lemon juice, chopped tomato, onion, cilantro, and green chilies.
Quesadillas:
- tortillas
- shredded cheese (Mexican blend)
- any other toppings (I like pico de gallo, allrecipes has a good recipe)
Literally just heat a tortilla on a pan, add shredded cheese, fold over and cook till done. Add additional toppings as desired.
