Tips for Cooking Boneless Pork Shoulder in Dutch Oven (No BBQ Sauce)

In the crockpot (with root veggies of choice), for sauce: balsamic vinegar, dijon mustard, brown sugar, salt, pepper, bay leaf, thyme and rosemary.
